Hey hi hello! Are you ready for apples?! Considering I’m staring at you with a vegan apple cinnamon bread, I sure hope your answer is yes.
Although I just realized, this is one of just two apple recipes I’m posting this fall. GASP, I know, who am I?! It seems like this time of year I just love eating apples straight up while they’re so amazing and sweet, but then they’re gone too soon for me to even bake with them. I cannot wait to go apple picking this year! Every year when we go I eat approximately 12 before we’ve even left the place.
Luckily I was able to save some apples to bake up this sweet, rich loaf of vegan apple cinnamon bread. Now, I’ll be the first to admit that some flavor combinations can’t be touched when it comes to dessert (looking at you, chocolate + almond/peanut butter).
But apples + cinnamon is so automatic, so classic, so GOOD. These perfect fall flavors don’t disappoint, even if the bread does look weird and hole-y (don’t want to talk about it, trust me that it still tastes good despite it’s weird aesthetic!).
This sweet bread is a really simple mix of healthy ingredients. The base is banana flour, which we’ll combine with a generous dose of cinnamon, date paste, applesauce, flax eggs, almond milk, and of course, apples. Each ingredient plays an important role, and the process is really easy, per usual.
Mix the flour and cinnamon, add the date paste for sweetness, applesauce for moisture, flax eggs for a little binding and a lot of nutrition, and almond milk to bring it all together. Apples because, duh. Pour the batter into a nonstick loaf pan (don’t be like me and realize it’s sticking after it’s completely cool!), and you’re ready for the oven and for your house to soon smell like a fall dream.
This vegan apple cinnamon bread took about 50 minutes in my oven, but it may vary depending on how hot your oven runs. Just makes sure the middle doesn’t feel too gooey, and it should be golden brown on the top. It’ll firm up as it cools, so don’t over bake!
