Happy Monday! We’re going to start the week on a nutty note (alliterations give me inexplicable happiness). As bananas are my most favorite fruit/food of all time, I’m no stranger to banana bread. I’ve made lots of different variations with lots of different ingredients, but never with nuts! I went a little nut overboard here, but I’m not mad about it, cause, healthy fats, ya know?

This vegan banana nut bread is a fun variation on my favorite base banana bread recipe. Made with just a few healthy ingredients and sweetened completely with bananas, it definitely qualifies for a healthy breakfast OR dessert treat. Or both, because more banana bread = more better.

The vegan banana nut bread starts with banana flour and cinnamon – the cinnamon is optional, of course, but I’m having all the fall feels lately and it’s so complementary to both the banana and nutty flavors going on here. Next is some flax eggs, then 2 full cups of super ripe, mashed bananas! The bananas are the only sweetener going on here, so make sure they are ripe ripe ripe.

A little almond milk to bring it all together, then the nuts! I used a full cup and mixed cashews and walnuts, but you can use whatever you like. Almonds are actually my favorite, so I’ll definitely be trying that next time I bake this. Also, you can use just half a cup if you don’t want so many nuts…I admit I got a little nutty with how many nuts I added. 🙂

I love my banana bread soft, sweet, and almost a bit gooey in the center. Though I have to admit, the crunchy texture from the nuts takes it over the top! So comforting, made with just a few healthy ingredients,  and no harming or taking from sweet animals required. Slather on some almond or peanut butter, date paste, or fruit sweetened jam, and you’re ready for a mouthful of banana bliss (two alliterations in one post, I’m on a roll today!).

Vegan Banana Nut Bread

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Yield: 1 loaf of banana bread

Ingredients

  • 2 c banana flour
  • 1 tbsp cinnamon
  • 2 c ripe mashed bananas
  • 2 flax eggs - 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the fridge for 15 minutes before mixing into batter
  • 1 c almond milk
  • 1 c mixed nuts - I used walnuts and cashews

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the banana flour and cinnamon.
  3. Add the mashed bananas, flax eggs, and almond milk, and stir until everything is incoporated into a thick batter.
  4. Fold in the nuts, and pour the batter into a nonstick loaf pan.
  5. Bake the banana bread for 1 hour, or until the center no longer feels gooey.
