This vegan blueberry crumb banana bread is soft, sweet, full of juicy blueberries and topped with a blueberry banana crumb! Vegan, gluten free, and totally banana sweetened.
It’s no secret bananas are my favorite fruit. Whether it’s pancakes, gooey bars, nice cream, or doughnuts, I’ll find a way to incorporate nanas. While they’re no doubt my favorite, berries aren’t far behind. I can eat strawberries and raspberries for DAYS and not get sick of them, and I love them just straight up. Blueberries, though, I prefer frozen, usually blended into a smoothie bowl, or baked into something like these gems.
Maybe it’s just an Ohio thing, but it seems like I can almost never find blueberries that aren’t super mushy when I eat them fresh. I love their flavor, but the texture is always just meh. The only solution? Use this as an excuse to make banana bread, and throw in lots of juicy bluebs.
Lately I’ve been getting the itch to make banana bread with additions that make it feel more warm weather appropriate – have you tried this raspberry version?! So good. This vegan blueberry crumb banana bread is another spring/summery spin on my favorite classic banana bread recipe, and I have to say, I’m SO happy with how it came out. Plus, that blueberry + banana + oat crumb on top? I’ll take a bowl of just that, please and thanks.
This vegan blueberry crumb banana bread has an oat flour base, which honestly is my favorite for banana bread. I just love the flavor and texture oat flour gives, makes it so rich and almost gooey every time.
To the oat flour we’ll add mashed bananas, flax eggs, and almond milk. Per usual, your bananas MUST be extremely ripe and spotty, to the point that you’re wondering if they’re still okay to use (they are!). The bananas are the only sweetener for our banana bread, so we need them nice and sweet.
Gently fold the blueberries to the batter and pour into a nonstick or parchment lined loaf pan, and we’re ready for some crumb topping action.
I randomly decided to see if I could combine whole oats, mashed banana, and blueberries to make a crumb topping, and spread it over the batter before baking.
Spoiler alert – the topping is bomb.
I bake this vegan blueberry crumb banana bread for about 40 minutes, and it’ll firm up as it cools.
Speaking of cooling, be sure to let it cool completely. I usually take it out, let it sit in the pan for about 15 minutes, then turn it out carefully onto a wire rack or plate to finish cooling. This ensures you’ll get clean, pick up-able slices.
If you don’t care about picking up your slice, I highly recommend attacking the pan with a fork as soon as it won’t burn your face off, but maybe that’s just me. 🙂
