Happy Monday, friends! How are things? As of 3pm today it’s officially summer for me. Today the teachers have a professional development session for curriculum that I’m actually really eager to attend, but after that I’m officially on summer break!
I’m super happy and grateful to have the opportunity to slow life down a bit, focus a lot on the blog, get more settled in at our house, and enjoy the beautiful weather. Summer is when my soul is most at peace and happy – I just can’t get enough of the sunshine!
I can’t think of any better way to celebrate a special occasion than with some vegan chocolate banana bread.
Sometimes when it comes to brainstorming recipes, I have almost TOO many ideas. No need to fret, though, I just add them to my never-ending “to bake” list.
Other times, it’s the opposite. I fall into a total slump for a few days at a time. It’s like I have a general idea of something I want to bake, but I can’t put my finger on an exact method, flavor, or way I want to do it. The perfectionist in me is quite irritating in moments like this. I can’t figure out EXACTLY what will be the most glorious dessert possible, and things go downhill from there in terms of productivity. The inner dialogue typically goes something like this:
“Hm, what should I bake for the next recipe I’ll need? Still a few weeks away, but might as well get ahead. Maybe some cookies?”
“Wait no, there’s cookies on my schedule for the week right before this post would go up. Too many cookies at once. Insert eye roll. Think of something else.”
“Hm okay. Brownies. Those are always good! Who the heck doesn’t like brownies. Nobody I’d want to know.”
“Ugh but that isn’t very seasonally appropriate. Can my first idea ever be anything but chocolate?! Mmmm chocolate.”
“What about pie? What flavor, what flavor…”
“ALL I LIKE IS CHOCOLATE AND BANANAS AND ALMOND BUTTER, DAMNIT.”
“Yum, almond butter.”
“Think, think…ugh I don’t even like pie that much.”
“Cookies? CRAP. Too many cookies!!!!”

“I have no creativity and why do I even have a blog!!!! I’m the worst.”
“Ugh, and really dramatic.”
Slams laptop shut.

Fortunately a brain implosion of great ideas happened the other day. Thank goodness, because I had been in a bit of a dry spell when it came to ideas. I’m feeling refreshed and inspired, and have SO many wonderful recipes to test and bring to you this summer (and fall, and winter…yes, I have tons of ideas for those prime baking seasons already!).
But today, we’re taking it back to a favorite of mine. Last year I made this version of chocolate banana bread, and while it was gooey, chocolatey, and super delicious, I wanted to give it a bit of a makeover. A new and improved version, if you will. My main goal was to use ingredients you’re more likely to have on hand, and make things even simpler!
If we’re being quite honest, this vegan chocolate banana bread is even better than the previous version, and I couldn’t be more excited to make this again and again when we have company or want a fun, special brunch treat.

First of all, the ingredients for this vegan chocolate banana bread are minimal, healthy, and easy to find. We’ll start with oat flour, which is literally just whole grain rolled oats, ground up into flour consistency. So much plant power in oats – fiber, complex carbs to keep you full and give you ENERGY! Go plants.
Last year’s version used chickpea flour, which, as I mentioned, is so good, but oat flour gives the banana bread a bit more structure, but still has that awesome gooey center and a slightly crisp, chewy exterior. I then add dark cocoa powder, for that rich, powerful chocolate flavor. That’s it!
For the wet ingredients, all you need is some flax eggs, ripe bananas, and almond milk. Compared to some of my other banana bread recipes, this one has even more mashed banana, for two reasons. First, the addition of cocoa powder to the batter has a drying effect, so as a result, we need a little more moisture to keep that gooey center (the best part!). Also, the bananas are the only thing sweetening this bread, and since cocoa powder is slightly bitter, we need to balance that out with a little more sweet banana goodness.
In my oven, this vegan chocolate banana bread takes about 40 minutes. Yours may take a bit more/less time, and it also depends on the texture you like! I loooove an almost molten, gooey center to my banana breads, so I always stay on the side of under-baking slightly. If you want it a bit more sturdy, feel free to leave it in longer! Just put some foil over it if you notice it getting a little too brown on top before you’re done baking.
Once your vegan chocolate banana bread has cooled, prepare your tastebuds for some chocolatey, banana bliss! This bread is incredible on it’s own, and can totally stand alone when it comes to flavor.
Buttttt usually I can’t leave well enough alone, so if you’re a toppings/sauce/condiment freak like me, feel free to throw on some chocolate chips and almond butter, ya know, just because we’re grown ass women (or men, if you’re a man, hi, so glad you’re here!), and we eat our banana bread the way we like, damnit.
This vegan chocolate banana bread is so ooey, gooey, rich and chocolatey. The banana in this bread definitely comes, but the bread is still full of chocolate flavor. How many slices of this is too many in one sitting? Asking for a friend.
