Glad we’re on the same page – you guys get me. Today, we’re talking vegan chocolate chip pumpkin bread! Also known as thick, rich, sweet, spiced heaven.
So far this fall I’ve made some other sweet, comforting breads – banana nut and apple cinnamon – but I couldn’t let another fall season escape without a pumpkin bread recipe! And if we’re talking about pumpkin bread, the addition of chocolate chips is always welcome, right?
People that say pumpkin + chocolate doesn’t work…you’re confused.
This vegan chocolate chip pumpkin bread begins with banana flour and pumpkin pie spice. The banana flour is completely gluten free, and as a result it gives this bread a pretty dense, thick texture. Personally, I love that in breads – if I wanted a lighter crumb, I’d go for cake! So, just know that the texture of this bread is thick and satisfying.
As far as spice goes, I love to add a lot to any pumpkin goodies, because it needs it! Without plenty of spice, pumpkin really only adds moisture to baked goods. So, I encourage a heavy hand with the pumpkin pie spice so those flavors are the star of this bread.
To the dry ingredients, add some pumpkin puree, date paste for sweetness, and some almond milk to bring the batter to a nice thick consistency. Fold in your favorite vegan chocolate chips – I always use PASCHA! – and you’re ready to bake!
My vegan chocolate chip pumpkin bread takes about 50 minutes in the oven. Seems long, I know, but be patient, it’s so worth it. Plus, your kitchen will smell like pumpkin spice heaven while you wait.
