Specifically, this vegan chocolate chunk banana bread.
This banana bread is actual insanity. Like, get it out of the apartment ASAP so I don’t eat the entire thing in one sitting. Luckily, I could eat it all because it’s made with healthy, simple ingredients.
One of those healthy ingredients is pretty unique – banana flour. Literally just unripe bananas, ground into flour. I found it at Meijer, so it probably wouldn’t be hard to find at your local chain grocery store! I was super excited to try it out, because obviously ya girl loves bananas – it’s my blog’s name, for goodness sake! The banana flour gives a really unique texture, almost chewy – but in a good way! It made this vegan chocolate chunk banana bread perfectly thick, springy, and moist.
I was also excited because the banana flour is just 25 calories for 1/4 cup. That’s like, NOTHING. Now of course, minimal calories shouldn’t be the main focus – there are TONS of foods that are amazing for you when it comes to health, but have a lot of calories. I personally just like to eat…a lot. So if you’re looking for a lower calorie option for things like mug cakes or pancakes, give the banana flour a try! I’ve been making my regular weekend pancakes with it for over a month now, and using even just a cup makes a huuuuge stack.
I was so excited to see how it would bake up in banana bread, and the result did not disappoint.
FREAKING MELTY CHOCOLATEY EXPLOSIONS, IN YOUR BANANA BREAD.
I just can’t with this.
This vegan chocolate chunk banana bread batter starts with the banana flour – 1 and 1/2 cups (psssst that’s literally 150 calories for an entire loaf of banana bread – most may clock in around 600 calories for the flour alone!). To that we’ll add some flax eggs for a little bit of texture, a little bit of date paste for some depth of flavor with the sweetness, and of course, mashed ripe bananas. Super ripe, brown, and ugly! Those give the best sweetness and ensure your bread tastes banana-y.
Some almond milk to bring the batter together, and we’re ready for some chocolatey goodness.
Typically I use the Baker’s unsweetened chocolate bar, but lately I’ve been exploring some other vegan chocolate options. Go with a bar of whatever vegan chocolate you like! Chop it into rough chunks and stir it into the batter. I also sprinkled some extra little bits on top prior to putting it into the oven.
Make sure you spray the pan or use a nonstick loaf pan to avoid issues turning it out once it’s done baking.
I typically bake my banana breads for about 50 minutes, and this vegan chocolate chunk banana bread seemed just about perfect after baking that long. The top will be slightly golden brown, but the inside is still a little gooey – just the way I like it.
This vegan chocolate chunk banana bread is to die for. The banana flour gives amazingly unique soft and chewy texture. I love plain banana bread, but the addition of melty, rich chocolate seriously takes it out of this world. Soft, gooey, and packed with banana flavor and chunks of melty chocolate. AND it’s made with healthy ingredients.
