Vegan, healthy, totally plant-based. YES, I’ll take 27, please.
I’ll be the first to admit that I get VERY excited about all the food I eat, for good reason. Ever since going vegan I just freaking love everything I eat, and I’m serious. I know a lot of people are like “ew, salad,” but now that I eat healthfully my body craves these amazing foods and I seriously DIE at how good it all is. Like, every night when I eat a sweet potato I’m still awkwardly “mmmm-ing” and proclaiming my love for the earth for providing such yummy, healthy foods, even though I’ve probably eaten like, hundreds at this point.
You’d think it’d get old, but nope! Always divine. Every single meal. And honestly I think that’s a good thing. Food is fun, everybody loves it, and how cool that there’s a way to literally eat as much as you want and feel amazing? Note – I don’t mean eat as many of these brownies as you want, but like, you can still eat brownies and they’re HEALTHY! Cue happy dances.
So anyway, I know you guys are used to me like “oh my gah these are the best EVA” and whenever I say that I genuinely do think that, but like…these brownies? They’re on a whole other level entirely.
Chocolatey, almond buttery, fudgy, HEAVEN.
If you’ve followed my blog since last year (um hi, I love you), you may be thinking these pretty little vegan almond butter swirl brownies look familiar. And you’re right! I made some last year, and they’ve been one of my most beloved recipes in all of my little blog’s life. Because I love them so much, I decided to improve that original recipe an make one of my favorites even better! Did I also just want an excuse to bake these? Maybe. Probably. Absolutely.
So, these vegan almond butter swirl brownies start with chickpeas. Just one can, blended up with some almond milk, which gives a super rich and fudgy base texture to the brownies. I swear by the lil garbanzos in most of my brownie and bar recipes! SO good.
As always, we’re sweetening the brownies with date paste. Speaking of foods that I just CANNOT handle being so good…sigh. Dates are so sweet and caramely and juicy, I just cannot deal with it. BRB while I lament the fact that I didn’t even eat a single date in my life until I was like, 22 years old. SO MUCH TIME LOST.
Making up for it with lots and lots of brownies.
Cocoa powder because, we are making brownies after all, and some buckwheat flour. I told you guys a few weeks back that I’m currently in love with buckwheat – I’ve used it already in these bars and these INSANELY GOOD cookies – so here it is again! Also, there may or may not be another buckwheat recipe coming Thursday, so keep an eye out for that (breakfast!!). I love the texture buckwheat gives the brownies. Just half a cup tightens up the batter so they aren’t SO gooey that you can’t even pick them up.
Once your batter is ready, fold in some vegan chocolate chips, and it’s time to swiiiirl.
Just drop a few tablespoons of almond butter on top of the batter in the pan, and use a toothpick or knife to gently swirl. Yes, you can use peanut butter, but I’m team almond butter all day. Homemade, always.
These vegan almond butter swirl brownies are forever one of my FAVORITE desserts, for good reason! Rich, fudgy, so chocolatey, and swirled with your favorite nut butter, they are the ultimate treat.
