Soft, rich vegan chocolate chip banana bars couldn’t be easier to throw together, but their flavor is incredible. Healthy, gluten free and naturally sweetened with only bananas!
Happy Thursday, guys! Today I’m diving right in because I’m TOO excited to share this recipe with you. Two of my most favorite foods as the star ingredients, these vegan chocolate chip banana bars NEED to happen in your kitchen, ASAP.
Have you had a chance to use PASCHA chocolate yet? I gushed about this company on multiple posts, and for good reason. I love that they make healthy, totally allergen-free chocolate products and I love baking and eating them even more. I’ve made a super fun fruit pizza with their their chocolate spread – soooo creamy! – and the 100% cacao chips, and both are incredible. Today, we’re using those cute little chips, and they’re definitely co-star of this delicious chocolatey banana show.
I freaked out when I saw that the chips were completely unsweetened – it can be really hard to find good quality, dairy free chocolate, let alone in the form of classic little chips. They bake like typical chocolate chips and melt just as beautifully – see here and here for proof! I’m suddenly craving chocolate like crazy. Anyway, these chocolate chips could not be more perfect in these vegan chocolate chip banana bars.
Since I’ve used the chips in cookies, I definitely knew I wanted to go in the bar direction. Surprising, I know, I wanted to do a non-chocolate base, rather than a full out, fudgy brownie – if you’re feeling brownies though, I’ve got you covered. Anyway, I really wanted to highlight the taste and look of these cute chips! Since you can never go wrong with the chocolate + banana combination, I figured a banana bar would be just perfect.
These…they’re just b-a-n-a-n-a-s.
I’m seriously in love with these vegan chocolate chip banana bars because they are made with just 5 ingredients. Yep, just 5 ingredients away from soft, sweet banana bars loaded with gooey, melty chocolate.
The base is just chickpeas and almond milk. Sounds crazy/borderline gross, right?! Trust, I’d never steer you wrong. Just like the majority of my other brownie/bar recipes, the blended beans lend the incredibly gooey, soft texture.
Next up, the banana action! I have no idea why I just said “banana action.” Anyway, simply mash some SUPER ripe bananas, and stir in a little bit of banana flour – totally my favorite flour right now – to bring everything together.
Important note, friends – the bananas must be EXTREMELY ripe. Spotty, brown, ugly, fragrant, almost to the point of no return. They are literally the only thing sweetening these bars. I’ve found that if they’re really ripe, the bars come out so rich with banana flavor and definitely sweet enough. But even slightly green nanas here will not cut it. Ripe, ripe, ripe is the keyword today!
Once you’ve got your batter, you need some chocolate chips, of course! I always use PASCHA chocolate and couldn’t recommend them more highly.
Fold in those chips (also throw a few in your mouth), and you’re ready to bake.
These vegan chocolate chip banana bars take about 50 minutes in the oven. Since ovens can vary in temperature, just watch them at about 40 minutes – yours may take a little more/less time than mine.
Allow the bars to cool for at least 30 minutes in the pan, and they’ll firm up beautifully so you can easily cut and pick them up to eat!
PS if you want melty, ooey gooey pools of chocolate on top, sprinkle a few more chips on the bars as soon as they come out of the oven.
Oh my goodness, the flavor of these is out of this world. They totally exceeded my expectations for how much I would LOVE them. As someone who is absolutely banana bread–obsessed, I died over these because they literally are like the most perfect piece of moist, sweet banana bread in bar form. Oh, and with chocolate. Hi, I’ll inhale the whole pan in one sitting, thank you very much.
These vegan chocolate chip banana bars are perfectly ooey gooey and so sweet and flavorful from the ripe bananas and pops of chocolate chips in every bite. Definitely a new favorite bar recipe. Try these!!!
