Oh. My. WORD. A quick note before we get down to business here…I love everything I post. Recipes do not make it to my blog unless I’m 100% enthusiastic to share them with you. That being said, are there some that I love more than others? Absolutely. This is one of those – I actually posted another one on Monday! So, prepare yourself for dramatic exclamations, a lot of caps, and multiple professions of my love and adoration for these bars. Yes, they are THAT good. Promise!

The classic chocolate chip cookie is pretty much universally loved, no? I mean, who really is going to turn down a chocolate chip cookie? Not to mention the heavenly scent that results when a fresh batch is in the oven…don’t even play with me there. So good. Candles need not even apply, we just need cookies on deck, constantly.
The problem with traditional chocolate chip cookies is, they’re not so healthy. Sadly, they’re horrible. Such a classic, beloved dessert, but composed of classic, terrible for you ingredients. I worked on that issue here, and those cookies are pretty legit, if I do say so myself.
Lately though, I’ve been on a bit of a bar kick, especially ever since these banana babes blew me away. I wanted to bake a cookie bar, with all the classic chocolate chip cookie flavors, but a divinely gooey, almost under-baked texture. Healthy, but still comforting and decadent. In my opinion the best cookies are always slightly chewy on the outside, but SO soft and gooey in the middle. These bars capture that in every single bite. Oh, and each bite has a pool of melty, dark chocolate, too.

Just like those banana bars (and almost all bars/brownies I bake!), the base of these vegan chocolate chip cookie gooey bars is chickpeas blended with almond milk. This unappealing sounding mixture creates the “gooey” component of these bars. Soooo rich and ooey gooey. The texture is one of my favorite parts of these bars, and it’s so important! Don’t underestimate the power of the chickpeas.
Plus, they’ve got fiber and protein and all around plant power. Trust me, you won’t even taste them. With the dates in there for classic chocolate chip cookie sweetness, and vanilla of course, all you taste is pure chocolate chip cookie heaven.
These are GOOEY bars, so the only dry ingredient is a half cup of banana flour. Recently I’ve gotten some questions regarding substitutions, and honestly I can’t say with 100% confidence what could work in it’s place. Since there’s such a small amount called for here, I would think something like oat or maybe almond flour could work just fine. But honestly, I’d just look out for some banana flour at your chain grocery store, or buy some online! It’s absolutely worth it, because once you make one batch of these you may or may not literally daydream/regular dream/think about them, constantly.
I have a problem. A really, really, delicious problem.
Once the batter is ready, pour it into a square pan and bake for 50 minutes. Prepare your sweet teeth for the best day of their lives.
Straight out of the oven, these vegan chocolate chip cookie gooey bars are just that – GOOEY as all get out. The gooiest of gooey. You must let them cool completely, like at least an hour, if you want clean slices.
Although, if you don’t have a dessert blog and couldn’t care less about the aesthetics of your gooey bars, I highly recommend attacking the pan with a fork and some loved ones for the ultimate warm, rich, gooey experience. Actually, loved ones need not apply. Cause I’d probably throw an elbow to ensure I didn’t lose out on any of this magic. Kidding! Kind of. But I may consider it if they someone was between my mouth and these bars. Don’t think less of me, guys. They’re just sooo good. TOO GOOD!
Another perk of these bars is that they’re absolutely divine however you choose to enjoy them. I’m typically a warmer-upper when it comes to desserts, throwing them in the microwave for 10-15 seconds for that warm, gooey experience. I get that from my mother – hi mom! But I couldn’t even resist waiting that much longer to devour these, and they were surprisingly AWESOME cold, straight out of the refrigerator. My husband devoured about four bars immediately upon walking in the door from work the day after I made them. He literally didn’t even put his bag down.

These bars are made up of just a few ridiculously good for you ingredients, but they come together to create an insanely delicious, easy bar, with all the wonderfully nostalgic flavors of a chocolate chip cookie. The texture is ooey, gooey, and so rich, with the perfect complement of pops of chocolate chip in every bite. The flavor is sweet, caramel-y, and of course, will totally remind you of a cookie.
Main ingredient here is beans, guys. JUST SAYING. Go plants!!
As I shoveled a ridiculous number of these vegan chocolate chip cookie gooey bars in my mouth, I proclaimed these, “possibly my favorite thing I have EVER baked” to my husband. Time has passed since then, and I am still SO serious. Kind of causing an identify crisis, as a self-proclaimed cake addict. Regardless, I’ve actually found myself daydreaming about them since, and I know it’s only a matter of time before I make more. Their ingredient list is humble (which means they’re EASY!), but I am dead serious, you guys! You need to try these. NEED to.
