Sooo much chocolate going on today. I can’ think of a better way to start a Thursday! Or any day, for that matter. I mean, a vegan dark chocolate skillet brownie all to yourself?! So much yes.
First of all, this skillet full of dark, rich, cocoa perfection was totally inspired by my mama! Her birthday was this past weekend, and when deciding on what recipe to honor her big day with, there was NO question: chocolate.
My mom is a chocoholic in every sense of the word. She’ll take it in cake, brownies, candy, doughnuts, whatever. I like to think that’s where my obsession comes from. If anybody deserves an entire skillet brownie, it’s my mom. She’s strong, smart, a little sassy, and the best example I could’ve ever asked for of how to be an overall awesome person. Now that I’m an adult, we’ve grown to be so, so close and I can’t imagine a day without being able to call or text this lovely lady for advice, support, or just to chat.
So, happy belated birthday, mama! Here’s a vegan dark chocolate skillet brownie for a rich, decadent, AND healthy indulgence!
Clearly today we’re totally focused on chocolate. By now, you probably know I love PASCHA chocolate. It’s a family-owned chocolate company that prides themselves on being totally allergy free. No dairy, eggs, nuts, or any potential allergens come close to where they make their chocolate, making it totally safe for anybody with allergy concerns. Or perfect for us health conscious, as they offer unsweetened, 100% cacao mass chips! They look identical to any chocolate chip, but have no added sugar or other nasties, just pure, rich, dark cacao bliss.
This skillet brownie couldn’t be easier to throw together. I love brownie/bar recipes to begin with for their ease, and this is just like that, only in a cute little skillet. Mine is 6.5 inches, so makes sure you’ve got the same size or adjust your quantities according to yours.
The ingredients list here is short and sweet. Banana flour, cocoa powder, date paste, almond milk, and vegan chocolate chips. Banana flour to keep things gluten free (and low calorie, if that’s what you’re looking for!), date paste for all natural, caramel-like sweetness, and some almond milk to bring everything together. As a result, you’ll get super rich chocolate flavor, since not a lot of other flavors are there to interfere. Sometimes, pure, chocolate power is what we want, and that’s definitely the case today.
Once you’ve got your batter all mixed up, throw it in your sprayed skillet and bake away. Too easy. Dangerously easy. A whole skillet of ooey, gooey, brownie is about to be in your belly! You won’t be mad.
Right when you pull it out of the oven, sprinkle a few more of the PASCHA chocolate chips on top, for that ultimate melty, gooey chocolate effect.
I can just picture my mom now saying – “this would be soooo good with ice cream on top!” Hey, I told you she was smart. Grab a pint of some coconut milk ice cream and go to town. Just imagining that contrast of textures is making me drool!
