Vegan No Bake Almond Butter Buckeye Bars

Thick, rich, no bake almond butter buckeye bars! These bars have a chocolate almond base and are topped with a decadent layer of almond butter. Vegan, gluten free, and sweetened naturally!

If you’ve been around here before, you know almond butter is one of my top 5 favorite foods on this earth – along with sweet potatoes, bananas, chocolate, and grapes. The combination of almond butter and chocolate is second to none, in my opinion. It’s so rich, perfectly sweet and just slightly salty, and so, so decadent.

This flavor combo was even my choice for a post marathon, celebratory feast a few months back! Best decision ever.

Chocolate and almond butter both make an appearance in my FAVORITE recipe on this blog. Today’s recipe may just be right up there in terms of it’s insane deliciousness and sheer decadence! I love everything about these vegan no bake almond butter buckeye bars.

I think my original love of this combination comes from the chocolate peanut butter combination in traditional buckeyes, as I grew up in an Ohio State loving family and went to school there myself. These almond butter buckeye bars are similar in flavor, but without the calorie laden horrible ingredients of the traditional treats!

These bars have just 4 required ingredients, and they’re all healthy! Talk about easy. Oh, and you don’t even have to turn on the oven!! Snaps for delicious treats without added steps.

The chocolate crust layer is a simple mix of almond flour, cocoa powder, and date paste. Oat flour could probably be swapped out, but I haven’t tried – I used almond because I really wanted to drive home the almond flavor in these bars!

Once you press out the crust into a pan, simply mix some natural almond butter – have you seen my homemade recipes?? – with a little bit more almond flour for structure. The hardest part is freezing the bars for at least 2 hours! This ensures that you’ll be able to cut them into cute little squares/rectangles without them falling apart.

These vegan no bake almond butter buckeye bars are to die for. Super rich, chocolatey, and so decadent. The crust has a slight bite, while the top almond butter layer is so creamy dreamy. The PERFECT combination.

Vegan No Bake Almond Butter Buckeye Bars

Prep Time: 20 minutes

Total Time: 2 hours, 20 minutes

Yield: 9 square bars, or 10 rectangular bars


  • Crust:
  • 1 1/2 c almond flour
  • 1/2 c unsweetened cocoa powder
  • 1 c date paste (I blended 16 medjool dates with about 1 c hot water - you may need more/less water depending on how juicy your dates are!)
  • Almond Butter Layer:
  • 1 c natural, unsweetened almond butter
  • 1/2 c almond flour


  1. Make the date paste, then mix with the almond flour and cocoa powder.
  2. Press the crust mixture into a square pan into an even layer - it'll be thin and seem like there isn't enough, just keep spreading!
  3. Mix the almond flour and almond butter for the top layer, and gently spread over the chocolate crust.
  4. Set the pan into the freezer for at least 2 hours before cutting into squares.
