Happy Monday, friends! How was your week/weekend?! We got back from the honeymoon Friday night, and it was incredible. We worked out, ate copious amounts at the buffet, and laid out in the sun by the ocean. Every. Single. Day. And it was absolute bliss. The buffet was SO legit…all the fruit I could ever want!! Did you catch it on insta? Also, my beach read was The China Study by Colin T. Campbell. It’s another amazing book about really legitimate research, and again proves that a vegan, plant-based lifestyle is the healthiest. It also shows how blinded our society is to this healthy lifestyle, and how the industry leads us to believe that animal products are “healthy” when that couldn’t be further from the truth. Read it!
Anyway the honeymoon was so fun, it seriously could not have been better. It was nice to slow down after the wedding craziness, relive that day, and spend some quality time with my wonderful husband 🙂 I hope you all had a wonderful week! Saturday we celebrated my birthday, and since birthdays are the definition of fun, I wanted to share a recipe that is the MOST fun. Sprinkles!!! And better yet, natural, vegan sprinkles, free of anything artificial/weird. What’s more fun than pops of pretty color on cupcakes, pancakes, or waffles?!
Before we get to the fun, homemade vegan sprinkle action, I wanted to let you know about another part of the blog I’ve been working on! I always want to make plant-based, vegan baking easy and accessible to everybody. My recipes are healthy and vegan but very easy to make; however, people often are intimidated or confused by plant-based baking since they may not be familiar with ingredients. Now, onto the sprinkles!!!
To make these homemade vegan sprinkles, you’ll use unsweetened shredded coconut for red, green, and purple. For yellow and orange I just zested a lemon and an orange – you really can’t taste the flavor and I zested them super lightly so you aren’t like chewing through huge pieces of zest. Trust me, it works! For red, green, and purple I just blended some fruits/spinach to make a liquid, tossed the coconut in, then removed the coconut from the liquid to dry out. Make sure you get as much liquid off as possible, then just spread it out on a plate so it can dry. It holds the color wonderfully, and while the process takes a few minutes, it’s totally worth it for the beautiful color free from nasty additives/foreign ingredients!! Sprinkles just make me so happy, I can’t even with these. They make any recipe SO cute and festive.
This is the cupcake recipe I had made for our wedding dessert (these!), during the cutting the cake part. I’m confident our photographer got about 30 pictures of us shoving it in one another’s face, so I can’t wait to see those. 🙂
