Whoever looked at a coffee mug one day and thought, “that looks like the perfect vessel for cake, not coffee” needs to be my best friend from now on.

I mean, don’t get me wrong. While I don’t typically drink coffee (probably drank enough for a lifetime during grad school, if I’m being honest), I’ve got nothing against it. But if we’re choosing between a cup of coffee and a literal cup of cake, you know what I’m going for, every time.

I love super decadent, more involved cakes and cheesecakes. But we’ve all had that random Tuesday night when we want a little something sweet after dinner, but don’t feel like making a full size dessert. This vegan chocolate chip mug cake is a new favorite of mine because mug cakes are just SO. FREAKING. EASY. All you need for mixing and baking is a coffee mug or tiny bowl/ramekin, which is what I used, and some ingredients that you probably already have on hand!

For this vegan chocolate chip mug cake, you need 5 simple, healthy ingredients. Oat flour, stevia, applesauce, almond milk, and vegan chocolate chips. Just grind your oats into flour, mix in some stevia for sweetness, then add the applesauce and almond milk. Fold in some vegan chocolate chips, and that’s it! Literally takes about a minute to get it ready.

The baking part is where mug cakes can get a little tricky, because all microwaves are different. Mine took 2 minutes, but just watch yours closely. It’ll get firm around the edges, but the center will stay slightly gooey, just the way I like it! That warm, almost molten center is the best bite.

Ingredients

  • 1/4 c whole grain gluten free rolled oats, ground into flour
  • 2 tbsp stevia
  • 1 tbsp applesauce
  • 1/4 c almond milk
  • 1 tbsp chocolate chips

Instructions

  1. In a ramekin or mug, mix the oat flour and stevia.
  2. Add the applesauce and almond milk and stir until everything is incorporated.
  3. Add the chocolate chips, then microwave for about 2 minutes.
