Made with just 6 ingredients, this recipe is over the top decadent but EASY!
HAPPY BIRTHDAY TO MY MAMA!! Sorry for shouting, but this past Saturday was my mom’s birthday, so today’s recipe is totally dedicated to/inspired by her. My mom is the most amazing woman I know – strong, smart, and always there for me. She’s always got the answer, and I can’t imagine getting through any significant part of life without her! Not to mention she’s literally planned the entire wedding so far without breaking a sweat – including addressing every envelope for invitations with super intricate, gorgeous handwriting – cray, right?! But in the best way possible. She’s got a goofy side that never fails to make me laugh, and I hope to be half the woman she is someday.
I hate that I wasn’t back in Columbus to celebrate my favorite lady, but I figured making this super EASY but absolutely insane chocolate dessert would be a way to make it up to her 🙂 Sandy is the ultimate chocolate lover (probably where I got it from), and this vegan chocolate lava cake delivers melty, molten, chocolate decadence. I’m so excited to share it with you! I am SO excited about this recipe, simply for the fact that this is a well known dessert that can be a little intimidating. I had such success with it, I was sooo excited – this chocolate lava cake is EASY. No crazy techniques and a super short ingredient list, anybody can throw this impressive dessert together with success.
Oh my stars, this cake, I can’t. The cake itself is rich, chocolatey, and has the most amazing moist and fluffy texture. The base for the cake is almond flour, unsweetened cocoa powder, and a little bit of baking powder. For the cocoa, I always use Hershey’s special dark. I find it adds that super rich, deep chocolate flavor, but if you’ve only got regular unsweetened it’ll still work out great.
Once the dry ingredients are mixed, I added just a little bit of almond milk and some date paste – 4 dates was all it took, they added the perfect amount of sweetness and moisture to the cake. Pour the cake batter into a oven safe ramekin, and it’s ready to go! So easy, right?!
Now that the cake is ready, we need our lava center! Of course it’s totally unsweetened (in order to stay vegan), and chocolate on its own can be a little bitter – I found that the sweetness of the cake was more than enough to balance out the dark chocolate center, but you could choose whatever chocolate bar you want to start. I simply broke two small squares off the bar, gently pressed them into the center of the batter in the ramekin, then smoothed some cake batter from the side back over the top so I could no longer see the chocolate bar pieces.
Bake time for this beautiful vegan chocolate lava cake was about 25-30 minutes for me. The cake is VERY moist, and my goal was to be able to turn it our of the ramekin before breaking open the center – so when I checked it around 20 minutes, I knew it would be delishhh but definitely would fall apart if I tried taking it out of the ramekin. I left it for about 10 more minutes, and it was still melt in your mouth soft but held its shape when I turned it out after allowing it to cool for fifteen minutes in the ramekin.
Even after cooling, the center was still molten, chocolate lava perfection! Really, do I have to convince you? This chocolatey bliss speaks for itself…
Trust me, you NEED this vegan chocolate lava cake in your life. If you know a chocolate lover, this is sure to impress. Or, simply make it because you survived Monday and you’re awesome.
