Another Monday, another decadent, healthy treat for your Valentine’s day menu! Or any night of the week with netflix. We don’t have netflix but Joe and I regularly binge watch series – last summer was Friends, which obviously changed my life…best show ever. Right now we’re watching New Girl which is sooo much better than I thought it’d be. Any recommendations for when we’re finished?! We only do one at a time because we make a point of reading every night and between that and work/dinner, there isn’t much time left for TV (which is not a bad thing!). Although I am super excited for How to Get Away with Murder to come back this Thursday…eeep so intense, I can’t deal. But that always gets watched a few days after it airs, since we get up so early to work out and I can’t stay up until 10pm to save my life. I’m 80 years old.

The perfect snack for any TV watching/Valentine’s day date night? These vegan 2 ingredient chocolate truffles! Dates and unsweetened cocoa powder, that’s it. I use special dark cocoa powder because the dates are so sweet and it balances perfectly with the dark, almost bitter cocoa powder. Blend the dates and cocoa powder in a blender – when I first tried making these I was suspicious how they would blend together without any liquid, and at first it seemed like they weren’t going to. My blender cup literally looked like a weird cocoa powder tornado and it seemed like nothing was happening. But thank goodness given some patience (the struggle is real), the ingredients mix into a thick dough. I dumped it out and shaped it with my hands so that any loose cocoa powder was incorporated. Then I just pulled off small pieces and rolled into cute little truffles! Easiest treats ever.

Once you’ve got the chocolate truffles shaped, it’s time to roll away! If you have little ones I was thinking it’d be so fun to set up a truffle decorating table with tons of different toppings to roll in! For these I used unsweetened cocoa powder, chocolate protein powder, unsweetened coconut flakes, and walnuts. They taste like pure chocolate goodness – the dates provide plenty of sweetness to balance out the unsweetened cocoa, but you can’t really taste dates.

Joe literally said, “it tastes like one of those chocolates you get out of a box!” All of them were to die for, but Joe loved the one with protein powder and I especially liked the cocoa powder, and I love the crunch the nuts give. Whether you like a simple or crazy truffle, you won’t be disappointed with any variety of these. Wash them down with some almond milk or a cute little cup of espresso like we did. How could you go wrong with vegan 2 ingredient chocolate truffles that are GOOD for you?! Your valentine will thank you.

Vegan 2 Ingredient Chocolate Truffles

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: 6 truffles

  • Medjool dates (I used 4 dates and that made about 6 truffles, so increase/decrease according to how many truffles you want - 8 dates would make about 12).
  • Unsweetened cocoa powder (I used 1/4 cup of cocoa to make 6 truffles, so again just increase/decrease according to your amount of dates. 1/2 cup cocoa for 8 dates would make about 12 truffles).
  • Any optional toppings for rolling - unsweetened coconut flakes, chopped nuts, cocoa powder, protein powder

  1. Put your cocoa powder and dates into a food processor and mix until a thick dough forms. It seems like it won't come together at first, but it does!
  2. Once it's as mixed as possible in the blender, work the dough with your hands to form a large ball that sticks together. Pull off pieces to roll into truffles in whatever size you'd like.
  3. Roll truffles into desired toppings.
