Vegan almond butter chocolate chip cookies combine my two favorite ingredients EVER. Made with just 5 ingredients, these healthy cookies taste so rich and satisfying while being gluten free and naturally sweetened.
Today is my last day of kindergarten! Okay, technically it’s my last day of my second year TEACHING kindergarten. It was simultaneously a difficult but awesome year. I learned so much about myself and got to see 25 adorable kindergarten nuggets daily, that I will definitely miss dearly over the summer.
Not to toot my own horn (toot toot), but teaching is a hard job that a lot of people don’t truly understand. Now don’t get me wrong, I know there are COUNTLESS other jobs that are “more” difficult (not that we should be comparing, anyway), but I think that there’s a lot more that goes into teaching than people see or know.
I literally want to body slam people when they say it’s like playing or babysitting all day. It’s classroom management, paperwork, navigating the moods and personalities of 25 children, tying shoes, wiping boogers, sharing silly stories, trying to be mature instead of laughing at kids farting (I can never NOT laugh at this, because I’m still five years old apparently), repeating myself approximately a hundred times a day, wanting to bash my head into the wall if I have to repeat myself again, solving conflicts, taking sneezes straight to the face, oh and actually teaching the state standards! And some days, it’s like herding cats. But it’s always fun, always rewarding, and always A LOT.
Basically what I’m saying is GO TEACHERS! If you’re a teacher, you better be relaxing, resting your feet that are sore AF, and treasuring the fact that you aren’t tying ten little pairs of shoes today. I guess that’s a little more kindergarten specific.
Anyway, I personally am celebrating and saying helloooooo sweet summer with vegan almond butter chocolate chip cookies!
You guys know I love almond butter, right? Like, in an almost weird, too much, why is she so obsessed kind of way. And I have no shame AT ALL. I literally will never forget the day I made and tasted these dreamy brownies that I’m 100% sure were literally transported down from heaven above, they are amazing.
I just will never get over the rich, creamy, nutty flavor of almond butter. Seriously, could eat it in or on anything at all. It literally would be good on top of a shoe. Alright, I’m being dramatic. But it’s good. SO GOOD. Too good!! I’ll stop.
I’m whispering this, but if you don’t like almond butter, peanut butter works in these cookies too. Just know you’re breaking my heart a little bit (a lot).

These cookies start just like many of my other recent cookie recipes (classic or double chocolate), with oat flour! Still on that kick, for sure. Whole grain, rolled oats ground into flour give the perfect thick, chewy, all around texturally wonderful base to the cookies.
To the oat flour, we’ll add date paste for sweetness, of course, and a flax egg for a little more structure, but mostly for some nutrition. Healthy omegas in those cute, ground lil seeds.
Next is the star of the show!!!!!!!!!! Sorry I’m super annoying.
Use an all natural, unsweetened almond butter. I like using homemade, because it comes out so creamy and a lot less grainy than store-bought. Plus when you make it at home, you can roast the almonds beforehand which gives even more of that rich, pure, nutty almond flavor. I’m drooling. Seriously though, there’s something about almond butter that is just so much better to me than peanut butter! It’s so much more rich and decadent, to me at least. Guys, someone needs to validate me and let me know that I’m not the only one this weirdly obsessed.
On top of all this almond butter perfection, we’re adding chocolate chips. This is my favorite brand, forever.
Almond butter + chocolate = Sara never leaving her house and eating cookies for the rest of her life.
These vegan almond butter chocolate chip cookies are seriously my DREAM cookie. Even dreamier since they’re made with only 5 healthy ingredients! The almond butter dough is sweet, soft, and chewy, and when you load that perfect dough with dark, rich chocolate chips, they’re just about cookie perfection.
