At the risk of sounding like a lecturing parent – breakfast is SO important, guys. I know you’ve heard this before, but seriously. If you want to set yourself for a happy, healthy, productive day, you need to fuel your body properly to get that outcome! It’s so weird for me to think back to high school when my mom would practically have to force me to even have a bite of something before going to school. But now that I work out first thing in the morning every day, I LOVE eating breakfast and look forward to it every day.
Whether it’s my go to oatmeal breakfast bowl, or something more indulgent and special on the weekend, breakfast is never skipped in this household, and it definitely plays a big role in how productive and motivated I am to get my work done during the day. I have energy, and my mental energy is so impacted by what I eat, and a healthy breakfast always helps me stay focused and feeling amazing. I’ve been really excited to share this recipe with you because these cookies are super simple, healthy, perfect for meal prep before a busy week, and damn delicious, of course.
The dry ingredients are pretty simple – all you need is some oats! I use whole grain, gluten free rolled oats. You’ll grind some up into flour and leave some whole for wonderful texture in the cookies. I also add some cinnamon, but that’s optional. Oats are SO nutritionally dense – full of fiber to keep you satiated, rich in vitamins, minerals, and antioxidants, and they even have some protein and healthy fat. All that is just a plus for how wonderfully comforting and delicious they are! I eat oats in some form every single day, and wouldn’t have it any other way.
The wet ingredients are simple, too. All you need is some flax eggs for binding and even more nutrition – flax is full of extremely beneficial omega 3 fatty acids, fiber, and it’s great for heart health, too. I also eat flax literally every day of the week! The only other wet ingredient and the sweetener for the cookies is, of course, mashed bananas!
Because they’re the only sweetener in the cookies, they MUST be ripe. I die a little inside when I see people eating green-ish bananas, or even yellow ones without a trace of brown on the peel, because that is not when they’re best! Bananas are supposed to be brown and spotty, slightly fragrant even before you peel them. That’s when they have the most natural sugars and are easiest for your body to digest for tons of energy. So make sure your nanas are RIPE.
After mixing the base ingredients for the dough, feel free to make them your own with other fun stuff! I love adding vegan dark chocolate chips for more antioxidants and to feel like I’m eating breakfast at dessert. My husband always loves raisins, but I’m thinking nuts, or coconut would be amazing in these, too. Have fun with it! That’s what baking is about, ya know?
These vegan banana breakfast cookies are chewy, sweet, and full of crunchy, chewy add ins. They’ll keep you full and satisfied all morning, and give you energy to dominate your day! Plus, how the heck can one have a bad day after eating cookies for breakfast?! I just don’t think that’s possible.
