Good Monday morning, sunshines! Let’s have some vegan breakfast cookies.
I think these sweet, berry-filled, vegan breakfast cookies are my heart crying out for warm, sunny weather. Probably because to me, berries mean summer, and summer is my favorite time of year, hands down (besides Christmas, obviously, but otherwise winter = death).
With Valentine’s Day fast approaching, I’ve already gone a little berry crazy as of late – see these pancakes and these cupcakes (I die, so good!). Cookies have waited long enough, and as a result today is their turn for some fresh, sweet, tart, beautiful berries. These are not for any holiday, but SO great for a typical week when you need a fast, easy breakfast.
BUT since Valentine’s Day is tomorrow, if you’re in need of a last minute, quick but OH SO CUTE berry-focused dessert, try these simple but divine looking treats from one of my fave blogging friends. They’re literally “dusted” with strawberries! So fun.
So while we stick it out for this last month of freezing, gloomy weather, let’s stay cozy and eat healthy cookies for breakfast.
While coming up with what would go into my vegan breakfast cookies, I immediately thought of oats. Probably because oats are literally the perfect breakfast food. They’ve got slow digesting healthy carbs for energy, tons of fiber, not to mention their slightly nutty flavor and chewy texture. All good things in cookies!
The dough for these vegan breakfast cookies is hardly even a recipe at all. Because there are just 2 required ingredients, you only need one bowl! It’s a quick mix of oat flour (just whole grain rolled oats, blended to flour texture), some whole oats for great texture and chew, and date paste for sweetness. The ground flaxseed is optional, but I highly recommend it! Same with the cinnamon – totally up to your taste.
As soon as I finished baking these my mind immediately exploded with potential flavor combinations with fun mix ins. Nuts, raisins, unsweetened shredded coconut, chia seeds, chocolate! This cookie is your blank canvas to turn into a beautiful, healthy breakfast masterpiece. Getting way too intense about vegan breakfast cookies, but seriously. Choose your favorite flavors, and mix them right in! The dough is thick but it should be able to hold a good amount of extras.
Bake a batch of these vegan breakfast cookies and you’ll be thanking yourself all week! The base is thick, chewy, and just sweet enough. They’re SO easy to throw together, and your options for flavors and add-ins is endless. Plus, you’ll have a healthy, gluten free, totally naturally sweetened, easy to take with you option for breakfast ready to go.
