Happy Monday! I’ve got some vegan chocolate chocolate chip cookies to ease you into another week. I’m on spring break (perks of being a teacher), but I’m sending you all happy, healthy, productive vibes for a fabulous week.
I posted these classic chocolate chip cookies a few weeks ago, and as soon as I did, I discovered a new brand that offers totally unsweetened, 100% cacao mass chips that I am now obsessed with. After I baked these cookies I reached out to Pascha, and I’m so excited to say I’ll be collaborating with them for a recipe using a new product of theirs that will be posted Thursday, and hopefully even more in the future! So, definitely come back for that.

While I was bummed to have discovered these awesome 100% cacao chips AFTER having made the classic vegan chocolate chip cookies, I was more than happy to have an excuse to make a double chocolate version of those cookies.
Because more chocolate is always the answer!
First of all, these cookies are easy peasy. Thank me later, with a mouthful of hot, gooey cookie.
The vegan chocolate chocolate chip cookies start the same as my chocolate chip cookies – oat flour. It gives the perfect amount of structure, chewiness, and also a slightly nutty flavor. It’s my favorite flour to use for cookies! Today we’re also adding cocoa powder, of course. I like to use the extra dark cocoa powder, but regular is just as delicious, too.
The rest of the ingredients are simple, and quite familiar around here. Date paste for rich sweetness, flax eggs for binding and a little moisture, while some vanilla gives that classic cookie flavor.
Finally, just fold in your dairy free chocolate chips, and you’re ready for the cookie sheet.
I use a 1/4 cup measure to portion the cookie dough onto the cookie sheet, and bake for just 10 minutes. I know, right?! You’re literally less than a half hour away from hot cookies!
If you want ooey, gooey chocolate on top, press a few chips on top of the cookies right when they come out of the oven. It’s a great trick for those melty chocolate pools on top of your divine, warm cookies!
These vegan chocolate chocolate chip cookies are my new favorite cookie EVER. With so much incredible chocolate flavor, soft centers, and crisp, chewy edges, they’re cookie perfection! Made with only healthy ingredients, you really can’t ask for more from a cute little cookie.
