Vegan chocolate chunk cookies! A one bowl recipe that’s an easy vegan and gluten free version of a classic chocolate chunk cookie.
A couple days in doing extremely low impact exercise, basically all lifting and some yoga. Practically driving me insane, but trying to keep my eyes on my overall goal and be disciplined for full recovery. Pray for me!!
Today friends, we’re talking cookies. HEALTHY vegan chocolate chunk cookies, specifically. I can’t with that melty chocolate. These cookies have been a long time coming – as a self-proclaimed “cake person” when it comes to dessert, I have to admit cookies are not far behind. Who doesn’t love a good chocolate chip cookie?! I just love the nostalgic feeling cookies bring, and the amazing aroma they fill your kitchen with when baking. Let’s get started!
For our base, I used a mix of chickpea flour and coconut flour. Chickpea flour is simply ground up garbanzo beans, and I love using it in baked goods. I added some coconut flour too, for texture purposes. Chickpea flour can get a little bit dense/chewy, so I wanted to counter that – we want a cookie, not a hockey puck. The coconut flour gives the cookies a nice crumb, but the chickpea flour holds everything together so they’re still chewy and wonderful.
Next is a little stevia for sweetness – you could probably also use date paste, but I didn’t have any that day and sometimes I feel lazy about pulling out the blender, so if you’ve got stevia or some type of natural granulated sweetener, go with that! A little unsweetened applesauce adds some moisture to the cookies, so no oil in this recipe. Last is just a little almond milk and a splash of vanilla, and into the oven they go (this made about 6 big cookies, but roll them to the size of your liking) – then the fun part! Let’s talk chocolate.
These are vegan chocolate chunk cookies, so some serious chocolate was necessary. In the picture above, I was experimenting with some chocolate options – the melty chocolate cookies (picture below) is a completely unsweetened bar of dark chocolate. Serious chocolate business! It’s sooo good with the cookie dough base. If you’re a chocolate lover, you’ll LOVE that variation.
The other option I tried was rolling date pieces in unsweetened cocoa powder, for a chocolatey flavor but more of a chew/melt than traditional chocolate chunks or chips. These were awesome too! So it totally depends on your preference, just use whatever you have on hand. The plain ones were awesome even without the chocolate (am I really saying that?!), but Joe spread some peanut butter whipped cream on one…smart man. I knew I was marrying him for a reason!
