As soon as September hits, it’s like a switch flips in my brain and it’s automatically fall. I know the first day isn’t technically for a couple of weeks, but let’s be real. We’re all ready for crisp mornings, cozy sweaters, pretty leaves, and lots of football.

Oh, and apple and pumpkin EVERYTHING.

These vegan cinnamon raisin walnut cookies are yet another version of my favorite chocolate chip cookies, which start with buckwheat flour for their incredibly soft, puffy texture. The double chocolate version is insanely rich and decadent, I kind of die just thinking about them. I’m so happy to bring you a version highlighting some of the best fall flavors!

Once you’ve got the buckwheat flour, all you need is some dates, flax eggs, and your mix-ins. While I know some of you suppress the urge to vomit at the thought of boogery little raisins invading your cookies, I highly recommend them! Maybe I’m blinded by love for my husband who is seriously in love with them, but they give a great chewy texture to every bite, while the walnuts have awesome crunch. Such a good combo! And we all know cinnamon is a must in everything in all fall food, so, there’s that.

Just like all of my cookie recipes that start with buckwheat flour, the dough is pretty tricky to work with. Like I describe in those other recipes, plop about a quarter cup of dough in 12 blobs on your cookie sheet, and don’t worry that it doesn’t look perfect. Once you’ve got 12 cookies, go back and use two fingers to gently spread into circular shapes.

They still won’t be the prettiest, most perfect cookies you’ve ever seen, but they will be all kinds of yummy, and that’s what’s important, right?!

Bake these vegan cinnamon raisin walnut cookies for a quick 10 minutes, or until they don’t feel too gooey when you give them a poke. Though I’m never mad at a gooey cookie, personally.

Vegan Cinnamon Raisin Walnut Cookies

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 12 cookies

Ingredients

  • 2 c buckwheat flour
  • 1 1/2 c date paste - I use about 20 dates blended with 1 1/2 c hot water, then measure out 1 1/2 c paste
  • 2 flax eggs - 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the fridge for 15 minutes
  • 1 tbsp cinnamon
  • 1/2 c raisins
  • 1/2 c walnuts

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the buckwheat flour, date paste, cinnamon, and flax eggs until everything is combined - the dough will be very thick!
  3. Fold in the walnuts and raisins, and portion about 1/4 cup of the dough into 12 cookies on the cookie sheet. I always plop that amount, then go back with my fingers to smooth them out into cookie shapes.
  4. Bake the cookies for 10-12 minutes.
