Do you ever have days where you just wake up in a weird mood? Yesterday was one of those for me. My workout was just blah which is very out of the ordinary for me, then I ate and was just feeling weird all morning. It was really irritating me and I could feel my mood going south, so I randomly decided to do an hour of Insanity. Yes, this is abnormal for me – I’m such a morning workout person, and usually stick with one really hard workout a day, rather than two.
I was DRENCHED in sweat, but I felt so amazing after. It was literally like I sweat out the weird, bad vibes. I felt like I totally turned my day around and it was really empowering. So often we think “This is just a bad day” and we let it go, a wasted opportunity and writing it off as just one of those days. But when we consciously realize we have the power and control over how our days go, it puts a whole new spin on things.
You can’t always control what happens, but you can definitely control how you respond.
Your response may not be putting yourself through a hellish workout, but whatever it looks like for you, turn that “bad day” around!
Perhaps with a vegan oatmeal creme pie? How could that NOT turn a day around, seriously.
Around here we LOVE oats. Pancakes, no bake bites, or just a fun flavored bowl, we always, always have whole grain oats stocked. Joe is literally OBSESSED with oatmeal cookies of any kind, and oatmeal cookies led me to think of oatmeal creme pies.
Did you eat these when you were little?! I was definitely more of an Oreo girl, as a chocolate lover, so I don’t think I’ve ever even had an oatmeal creme pie, just because they were overshadowed by chocolate options. But I have to say even without chocolate, these vegan oatmeal creme pies are insanely good.
Whole grains like oats have been proven to be amazingly good for your health. They’re high in complex carbohydrates which are slowly digested, giving you all day energy, and they’re high in fiber. Not to mention, they taste wonderful and keep you full for a long time.
I’d imagine the store brand oatmeal creme pies are a far cry from these. Hooray for healthified, veganized versions of fun childhood classics!
The base for these cookies is the same as these breakfast cookies – minimal ingredients, no mixer necessary!
You’ll put a little bit of cream on one cooled cookie, and gently sandwich with another cookie. Ta da! You just made a healthy, vegan oatmeal creme pie. Now pat yourself on the back and stuff one in your mouth. Actually, just take a big bite because these are HUGE! Makes them even more fun.
The cream will slide/ooze out a bit as you eat it…not a bad tradeoff for not having any artificial/crazy stabilizers like the real creme pies. And who doesn’t want coconut whipped cream dripping off their cookie/fingers?! No complaints here. But to combat any extra coming out too too much, I chilled the creme pies for a couple hours before serving.
These little vegan creme pies are soft, chewy, slightly cinnamon-y, and perfectly sweet. The whipped cream filling is so light and the best complement to the cookies. They’re so fun and nostalgic. I hope you love them!
PS, Joe put peanut butter on one. I knew I married this guy for a reason!
