Thick, soft, vegan peppermint mocha cookies! Full of chocolate and peppermint flavor, they’re even better than your favorite holiday drink. Made with just a few healthy ingredients, gluten free, and naturally sweet!
Tomorrow is the first day of December, and I’m over here soaking up every second of this magical time of year. Which means every second of the day I’m either listening to Christmas music, staring at my Christmas tree, or baking Christmas cookies.
I didn’t choose the elf life, elf life chose me.
Before I gave even a five second thought to what I put in my body, I drank traditional peppermint mochas from Starbucks and loved them. Who wouldn’t? They’re basically dessert in drink form. Rich, chocolatey, with just a hint of that peppermint flavor. I was always surprised by the fact that I liked them, because honestly, I typically don’t like chocolate and mint together AT ALL. I feel like too often with chocolate + mint stuff the mint just totally overpowers my beloved chocolate, or the mint is way too strong and I feel like I’m eating a tube of toothpaste. Not the ideal dessert experience.
Welp, none of those problems today, friends! Not with these cookies. The chocolate and mint are perfectly balanced, and dare I say these vegan peppermint mocha cookies are even better than the drink. Actually, I definitely dare to say that, because they’re vegan, healthy, and totally fruit sweetened. And they’re cookies.
Take that, Starbucks.
The dry ingredients for these cookies start like all my other favorite cookies, which is with buckwheat flour. My go to base for soft batch cookies! To that we’ll add some cocoa powder, for that rich, chocolate flavor. Last is a bit of espresso powder, or instant coffee powder. If you aren’t a fan of coffee, don’t fret! The coffee flavor is not prominent at all – it simply gives great depth to the chocolate flavor.
To the dry ingredients, we’ll just add some date paste and flax eggs. I added a half cup more date paste than usual with my cookies, because I wanted to make sure they were still soft, and to balance out the sight bitterness of the dark cocoa powder. Works like a charm!
Last is a bit of peppermint extract. And when I say a bit, I mean it! This stuff is POWERFUL. Smelling it will make your eyes water, and you’ll question putting it in your perfect chocolate cookie dough. Trust me, add just a teaspoon, and all will be right in the Christmas cookie world.
Fold your vegan chocolate chips into the dough, and bake for a quick 15 minutes. Dancing to Christmas music while you wait is a required step to this recipe.
These vegan peppermint mocha cookies are holiday perfection! Forget the sugary, dairy (SO cruel) laden drinks and bake up a batch of these beauties. Soft and sweet, with the perfect balance of chocolate and peppermint. Santa’s going to have to fight me for one of these.
