Vegan Chickpea Burgers

Hearty, savory vegan chickpea burgers! An EASY veggie burger that’s absolutely delicious. Perfect for cookouts or an easy weeknight dinner. This chickpea burger has a short ingredient list, making it simple as well as vegan and gluten free.

Happy May!! A new month means a new savory recipe, to balance out all the sweets around here. How was your weekend?! Ours was so wonderfully relaxed – no long run/marathon stuff to do for the first time since January! We picked up my wedding band Saturday (61 days!!!!), I went crazy in the kitchen with this burger as well as baking other stuff for the blog, then we went to church. We wanted to go on a date to celebrate the marathon, so after church we went to a Mexican place right by our apartment that has an entire portion of their menu specifically dedicated to vegan dishes! Joe’s choice for post marathon food was one of their awesome vegan lunches (my choice was of course something sweet, coming Thursday!) that my parents picked up on our way home from the race, and he had been raving about it, so I knew I had to try it! It’s so cool to see restaurants embracing vegan food, and I’m praying that by the time I’m older it’ll be the norm, for everybody’s sake. It was absolutely amazing, we both got a dish served in a half pineapple – talk about a cute presentation! It was grilled pineapple, portabello mushrooms, black beans, corn, and peppers. Of course I’m a sweets girl, but that dinner definitely impressed.

Speaking of dinner, this vegan chickpea burger does not disappoint either! I’m so, so excited to share it with you.

Raise your hand if you’ve ever been let down by a veggie burger…(everybody raising hand). Yeah, me too. Whether it’s too soggy, falls apart, or full of crazy ingredients, most store bought veggie burgers don’t pass our test around here. What always gets me is that veggie burgers almost always have some sort of grain (bread crumbs, rice, white potato) as a binder, which I’m not really interested in.

So I set out to create my own, using what else, chickpeas! They give this burger awesome flavor and texture. I use both chickpea flour and whole chickpeas, mashed just a little bit so that they lend great texture to the burger as well. The chickpea flour helps bring the burger patty together, so we won’t need bread crumbs or anything like that, and helps it hold its shape and structure after it’s cooked.

I added onions, chopped garlic, seasonings, and some hot sauce to the burger as well. We LOVE hot food, so we’re always heavy handed with spices/hot sauce, but these vegan chickpea burgers are super versatile in the way you choose to use spices or other flavorings. Oh oh and we always make this kinda weird sounding but super delicious tomato sauce – usually just crushed tomatoes or tomato paste, a little apple cider vinegar, hot sauce, mustard, spices, and a stevia. Like I said, we’re definitely spicy food people so it’d be great with just hot sauce, but that’s just me!

The best part about these vegan chickpea burgers is the texture. They will NOT fall apart or get soggy on you! This burger is thick, hearty, and quite large. For this one I went with one big patty, but you could definitely do some cute little sliders!! I cooked the burger in a cast iron skillet, hence the awesome, charred flavor – if you have a cast iron skillet, you know it’s not burnt, it just gives it amazing texture and an almost smoky flavor.

For the “bun” we usually go with lettuce wraps, Boston lettuce is typically a good choice since it has a good shape and leaves that don’t break easily. But again, go with whatever you like!

Vegan Chickpea Burgers

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 1 large burger


  • 1/2 cup chickpeas
  • Diced red onion
  • Diced garlic
  • Seasonings (I used pepper, garlic powder, and red pepper flakes)
  • 1/4 c water
  • 2 tbsp hot sauce
  • 1/4 c chickpea flour
  • Toppings: sliced red onion, tomato, sauce


  1. Mash the chickpeas with a fork until they're broken up well, but still have some texture.
  2. Add the rest of the ingredients and combine thoroughly, and shape into a patty.
  3. Sautee on the stove (I use a cast iron skillet) or cook on the grill for about 4-5 minutes on each side, until the burgers are slightly crispy on the outside (I did them on medium high heat)
  4. Wrap with a lettuce wrap or some other healthy wrap of choice, top/sauce away and enjoy!
