Coming at you with something savory on this Monday! I’m definitely the biggest dessert/breakfast fan, but every now and then I plan on sharing our favorite savory dinner recipes! I’m so excited about this one, because I eat it like 5 times a week EVERY week.
This week is going to be pretty crazy at school – I’ve got a professional development conference after school until 7pm Wednesday night, then the next day is parent teacher conferences which go until past 7pm – talk about a couple of long days! Luckily I’ve got the perfect fiancee and I know he’ll have some of these beauties waiting for me when I get home. Joe actually came up with this cooking method and I’ve been obsessed for like over a year now. The perfect man and healthy vegan sweet potato fries…what more could a girl ask for?!
Can I just start by professing my undying obsession with sweet potatoes…one of my favorite foods of all time. Literally could eat them every day and never get tired of it. I love them for how insanely delicious they are, and an added perk is the ridiculous amount of health benefits they have! Vitamin A in the form of beta carotene in addition to tons of other vitamins and minerals, potassium, and fiber.
The other day someone told me they had never had a sweet potato and I kinda had to hold myself back from punching them in the face. Okay I shouldn’t say that cause I’d never punch someone but COME ON! You’ve been missing out for way too long. OR if you think you don’t like sweet potatoes cause of a crappy cooking method you experienced when you were younger or some childhood trauma like that, try these. TRUST, they will not disappoint.
These vegan sweet potato fries aren’t fried, but they aren’t baked either. They’re a stove top version – I use a grill pan, but a cast iron pan would be great too. I haven’t tried in just a regular skillet, but I’m sure it would work out fine. I slice up the potato long ways, into big slabs, cook them in the pan for about 15-20 minutes total, then slice them into fry shapes. After that, your options for customizing are endless! I usually go with some type of homemade tomato based sauce or hot sauce, and we pair it with a big side of sautéed veg (brussels are my other true love). If you’re a toppings person, load it up! I used bell peppers, onions, and jalapeños for these, but you could literally throw anything on these and it’d be awesome. A perfect Super Bowl recipe, no? Have a great week! And eat some fries.
