I know it’s not technically over, but let me live. I hate cold weather and I am so so so so so SO ready for spring and summer. Let’s celebrate with my favorite dinner food!

I often get questions about what I eat for dinner. My answer is usually, “a sweet potato and a bunch of other veggies.”

Essentially, I try to eat a lot of colors, mostly vegetables, and sweet potatoes are alllllways a necessity. They are incredible for you in terms of health, but I just die over the flavor, and I’ve literally eaten them multiple nights a week for years now. I regularly lament how much time I wasted growing up NOT eating these sweet, tender, heavenly tubers. Joe and I always joke about how potatoes are like scientifically classified as “tubers” and that it’s probably the strangest word ever. So, sorry I said tuber. Moving on!

This vegan sweet potato power bowl epitomizes the perfect SIMPLE meal. It’s made on one pan, in less than an hour, and the only effort you have to put forth is chopping some veg and stirring a dressing with a spoon.

Totally doable even on the most exhausting days!

The best part of this vegan sweet potato power bowl is that other than the sweet potato, of course (NEVER optional, always necessary), all the other veggies are pretty customizable. Don’t like brussels sprouts? Throw some broccoli on instead.

The only thing that may vary is the roasting time, depending on what you change. I liked the vegetables listed in this recipe because they all roasted in the same amount of time. Therefore, I didn’t need multiple pans or have to set multiple timers to take the different components out at different times.

Sometimes going all out with elaborate dishes is totally fun, but sometimes ease is the name of the game with healthy, delicious, vegan eating. It ain’t rocket science, friends!

While the veggies for the vegan sweet potato power bowl are roasting, I mix together a really simple dressing. It’s a mix of mustard (make sure there’s no sugar/weird stuff added), seasonings (I use red pepper flakes for spiciness!), stevia for a touch of sweetness, and water to thin it out to dressing consistency.

I am a condiment queen, so the dressing is almost my favorite part of the entire bowl (almost because it’d be nothing without that glorious sweet potato!).

If you aren’t plant-based or you don’t regularly eat veg-focused, I get it. You may be staring at this thinking, really? That’s a bowl of vegetables, how is that dinner?

But TRUST AND BELIEVE this vegan sweet potato power bowl will fill you up. There’s something so magical that happens when you roast vegetables. The brussels sprouts get tender and slightly crisp, the cauliflower takes on even deeper flavor, and the sweet potato pieces are tender, rich, and seriously SO sweet and heavenly you may actually die of pleasure. Or maybe that’s just me. But they’re really freaking good.

Vegan Sweet Potato Power Bowl

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 1 power bowl


  • Power bowl:
  • 1 large sweet potato
  • Brussels sprouts
  • Cauliflower
  • Red onion
  • Grape tomatoes
  • Dressing:
  • 3 tbsp mustard
  • 1 tbsp water
  • 1 tbsp stevia
  • Red pepper flakes and/or any other seasoning you like, to taste


  1. Preheat the oven to 400 degrees.
  2. Chop the potato and other vegetables into uniform pieces, so they will cook evenly, and place on a foil lined baking sheet.
  3. Bake for about 50 minutes, until the vegetables are slightly browned and the potato is fork tender.
  4. Allow the vegetables to cool, and combine all the dressing ingredients and stir to combine, then pour over the bowl.
