Happy muffin Monday, round 2! This was a totally unplanned, double week of muffin recipes, honest! But once I made these banana babes, I knew I wanted a chocolate version.
It’s basically my mission in life to ensure that to every non-chocolate treat, there’s a chocolate option, too. What a noble quest I’m on. It’s off to a great start with these vegan chocolate banana muffins, if I do say so myself.
We start school in literally two days, and I’m freaking out a little, half due to stress, half due to excitement. I’m thinking I’ll need a batch of these on deck, ya know, for the end of long, crazy, fun kindergarten days!
Seriously though, how cute are these?! Just like the original banana version, they’re easy to throw together, sweet, healthy, but so rich and chocolatey. The dry ingredients begin with banana flour! This time around, though, we need cocoa powder, of course. I love using extra dark cocoa powder for richer, deeper chocolate flavor, but any will work just fine.
The wet ingredients are exactly the same, too! Flax eggs, almond milk, and plenty of sweet, ripe, mashed banana. In this recipe I added a little bit more banana than the original base muffins, since cocoa powder is naturally bitter. Let’s counterbalance that with a little bit of extra fruity sweetness, and we’re ready for the oven.
Vegan banana chocolate muffins are amazing on they’re own, because ya know, chocolate, but you can definitely throw some chocolate chips into the batter, I wouldn’t judge (I’d praise, actually). They’d also be great with some nuts, but that’s totally up to you and your muffin preferences. I loved leaving them plain and spreading some peanut butter on top (drooling). Choose your add-ins if you want any, bake, and you’re done!
Just like their more understated sister muffins, these vegan chocolate banana muffins are a great option for healthy snacks and breakfasts. They’re really easy to make ahead on the weekend and already have a jump start to a healthy but delicious week!
