I feel like literally every other picture I see on Instagram is some wildly beautiful doughnut, whether it’s drenched in sprinkles, covered in chocolate, or stuck on top of a cake or milkshake (note to self – make a recipe for a doughnut-topped cake/milkshake, ASAP).

I’m definitely not mad, because doughnuts are super fun to look at, and even more fun to eat (obviously). What does make me mad, though, is how absolutely horrible a traditional doughnut is, nutritionally speaking.

With these vegan peanut butter doughnuts with chocolate glaze, we don’t have that problem. They’re rich, sweet, and super decadent, while also being made with only simple, healthy ingredients.

First of all, it’s no secret I love making healthy, baked doughnuts – these were literally the most popular recipe on the blog last year. I’m not sure what it is about doughnuts, but they’re just a genuinely fun food. I think it’s probably the nostalgia they can bring back, memories of a super indulgent, sweet treat you don’t get all the time. Well now, we CAN have them more regularly in the form of baked, healthified, peanut butter chocolate doughnut heaven.

These vegan peanut butter doughnuts with chocolate glaze are the best yet to have ever graced my kitchen, no question. How could they not be? Chocolate + peanut butter = automatic success.

First of all, we begin with dry ingredients – whole grain, rolled oats ground into flour, and stevia for sweetness.

With my doughnut recipes, sometimes I use date paste, and sometimes I use stevia. Since I knew the peanut butter would add a lot of moisture and that the flavor would over power any caramely date sweetness, I use stevia. We want the peanut butter flavor to really shine through! Therefore, just a little bit of stevia in the batter makes the doughnuts just sweet enough – remember, we have a chocolate glaze to add on top for even more sweetness.

The wet ingredients for the doughnut batter are flax eggs, peanut butter, and some almond milk to bring everything together. As always, makes sure you’re using natural, unsweetened peanut butter. No nasty extras necessary! Spoon or pipe the batter into your doughnut pan and bake for 10 minutes.

These doughnuts are the polar opposite of a traditional doughnut, as far as ingredients go. Typical doughnuts use refined flour, a LOT of unhealthy fat, and of course, they’re usually fried. These are made simple, with fiber-rich oat flour, natural unsweetened peanut butter, and they’re baked. And you will NOT miss the other stuff, trust me.

Once the doughnuts are baked, turn them out of the pan and allow them to cool while you make the glaze. Traditional glazes are made with powdered sugar and something like cream or milk, but we’re obviously going a totally different route.

If you saw this chocolate INSANITY last week, you heard me talk (type?) about how much I love Date Lady products. For this chocolate glaze, I used her chocolate spread. It’s basically like peanut butter consistency, only all chocolate and dates. It is soooo creamy dreamy, and as a result it makes the perfect glaze for doughnut dunking.

Simply thin out a couple of tablespoons of the spread with about a tablespoon of water – I just heat it up in a small bowl in the microwave until it smooth and runny, then dunk the doughnuts. Or drizzle! Your preference – remember, these are a fun treat! Decorate however you like.

If you don’t have The Date Lady chocolate spread, I’d recommend the healthy chocolate sauce I use for these pancakes. Still thick and rich, and the perfect chocolatey partner for the peanut butter doughnuts.

I LOVE taking traditional, fun desserts and making them vegan/healthy. Vegan Peanut Butter Doughnuts with Chocolate Glaze

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 6 doughnuts

Ingredients

  • 2 c whole grain rolled oats, ground into flour
  • 1/4 c stevia
  • 2 flax eggs (2 tbsp ground flaxseed in a small bowl with 6 tbsp water, in the fridge to set for 15 minutes prior to mixing into the batter)
  • 1/2 c natural peanut butter
  • 1 c almond milk
  • The Date Lady chocolate spread

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, combine the oat flour and stevia and mix.
  3. Add the flax eggs, peanut butter, and almond milk, and stir until thoroughly combined into a thick batter.
  4. In a nonstick or sprayed doughnut pan, measure about 1/3 c of the batter into each doughnut ring.
  5. Bake the doughnuts for about 10-12 minutes.
  6. Top with The Date Lady chocolate spread - I thinned it out just a little bit so I could just dunk the doughnut in, or drizzle on top - I just mixed 2 tbsp of the spread with 1 tbsp of water and microwaved for about 20 seconds, then stirred until it was thin and smooth.
