Hi friends! What’s new?! This week was my first back at school. The teachers have two full weeks before the kids arrive, so I’ll be super busy preparing my classroom, plans, and all that fun stuff for the year. Before we start school officially, I couldn’t NOT share my go to breakfast recipe. I’ve literally been eating this vegan banana blueberry smoothie bowl alllllll summer. It fits all of my breakfast requirements – healthy, fast, easy, refreshing, and pretty. Okay pretty isn’t always a requirement, but it definitely doesn’t hurt.

My favorite thing about this smoothie bowl (and all smoothie bowls, really) is that it is EASY. I almost laughed typing the “directions” into the recipe section. Dump frozen bananas and blueberries in a blender cup. Add water. Blend. All done! In the summer since I have time I eat mine out of a bowl, but it’s also great for just keeping in the blender cup and drinking on the go.

While can absolutely use your unsweetened plant milk to make it a bit creamier, I’ve been using water instead and loving how much the pure fruity flavors really seem to come through. I may be totally imagining that, but whatever. It’s great either way!

So like most smoothie bowls, this one is a great canvas for as many yummy toppings as you can imagine! In addition to the frozen fruit, I almost always add frozen spinach, more fresh bananas on top, and some protein powder. Know what else would be good?! Rawnola. That just auto-corrected to Rwanda and I’m definitely sitting here giggling about it.

Ingredients

  • 2 frozen bananas
  • 1 c frozen blueberries
  • 1/2-1 c water

Instructions

  1. Combine all ingredients and blend until thick and creamy!
