FIRST DAY OF SCHOOL! I start my second year of teaching today with a brand new group of 25 kindergarteners. I couldn’t be more excited to start and I’m hoping today will be wonderful!
In honor of the new school year beginning, we’re saying goodbye to summer with a bang today. Well really, with a banana. What better way to end the best summer ever?!
When my family and I would go get ice cream when I was little, I never went for a banana split. I was more of a single scoop in a cup kind of girl, which may be why I still gravitate toward nice cream in a bowl as the base of all my smoothies.
But as I was getting all nostalgic about another summer coming to an end, a banana split seemed like the perfect dessert to go out with. Wouldn’t this be so fun to make into a “bar” style for a get together?! Different flavors of nice cream to choose from, toppings, sauces, etc…I love all the different options for flavor combinations.
For this healthified, veganized banana split, I went with strawberry and chocolate nice cream, scooped and nestled between a perfectly ripe banana.
Next are the sauces! Again I went with healthy strawberry and chocolate sauces, both of which are just 2-3 ingredients.
I toasted some coconut and walnuts for some crunch and great healthy fats, and sprinkled those over. Last was just some whipped coconut cream which melted into a deliciously creamy mess (still delicious though, obvi). Your vegan banana split is ready to go!
This healthy take on a vegan banana split is definitely just as delicious as one you may remember from childhood, and you won’t feel weighed down or gross afterward! I must say though, I kinda hate myself becase I bought three cherries specifically to plop on top of this gorgeous banana split, then realized 3 hours after making it they were still sitting in my fridge.
SO I know when you make this you won’t forget the cherries – and feel free to mix it up! If you like other nice cream flavors or have other ideas for toppings, go for it. Can you imagine some of this heaven drizzled on top?! Why didn’t I do that.
There’s no WRONG way to do a healthy, vegan banana split, friends.
