So, guess what inspired these vegan berry popsicles?
I saw the ice cream truck for the first time since I was probably like, 11 years old. The other day I was taking Rumor for a walk, listening to a podcast, probably exclaiming “exactly!!” or “OMG yaaasss!” aloud (scaring my neighbors), as though the awesome person I’m listening to can hear me. What can I say, I listen to some amazing vegan podcasts that get even more excited and inspired about the whole plant-based movement, if that’s even possible!
Anyway, while we were walking, I heard some soft music, and paused the podcast. What came rolling down the street? The ice cream “truck,” which I put in quotes because if you really pay attention it’s actually just one of those creeper vans. Regardless, the music is exactly the same. It brought back some memories of hearing that little jingle, sprinting into my house and begging my mom for a couple dollars, and sprinting back outside, hopefully avoiding tripping and busting my face on concrete trying to get there in time.
Obviously I’m not attracted to the ice cream truck anymore, thank goodness. But I am definitely attracted to the idea of making homemade, 3 ingredient frozen treats, like these cute vegan berry popsicles.
These are seriously so easy. Can I even call it a recipe? Mostly, they’re just a fun, easy, customizable fruit popsicle for the summer. Tastes like a smoothie, but pops are just more fun, ya know?
The base is frozen bananas, because they’re my favorite and so creamy, and whatever other fruit you want. Yep, it’s that simple! Put the fruit in a blender with just a bit of almond milk to get it going, and blend away. Pour into your popsicle molds and we’re ready for the freezer.
Freeze them for at least 6 hours, to ensure they’re totally set. Really, overnight is probably best! If you don’t wait long enough, the stick will just come straight out and all the yummy fruit will be stuck in the mold. Not cool. So, I can’t stress enough, give these little cuties time to get nice and frozen before removing.
These vegan berry popsicles are such a fun, simple treat. Throw them together in the morning or the night before, and you’ve got a healthy frozen treat for the hottest summer day! They taste like a bomb smoothie, in cute, pop form.
