Last time I made pops I went in the berry direction, but it’s still summer, it’s still hot, and I wanted some more pops, so these vegan chocolate chip nice cream pops were born. I knew this time around we HAD to highlight my favorite fruit, and chocolate, because, chocolate is never a bad addition anything. Except maybe like…nope never mind, good with everything!
I’m going to keep things short and sweet today, but first of all, can we talk about how sucky pops are when it comes to being photogenic? Actually I shouldn’t say that, because I’ve seen plenty of photos of gorgeous looking pops. But like…whenever I make them they melt everywhere and look like little turds and super unappetizing.
The good news is that despite my inability to photograph these vegan chocolate chip nice cream pops, they are sweet, banana-y, and full of pops of chocolate. So, they’re great. And SO fun to eat! They couldn’t be easier to make. Blend up some nice cream, pour a little in the mold, and drop in some chips. Repeat that process, and freeze!
Once they’re in the molds, make sure you freeze for at least 8 hours, so that they’re totally frozen and easy to take out after running the molds under some hot water. I’m known to be impatient and try to pull them out too soon, only to have a stick in my hand with all the nice cream left behind. I then curse and throw them back into the freezer, forced to wait longer. Don’t be like me.
If you’re super awesome, the best idea is probably just to make them the night before and freeze overnight!
Vegan chocolate chip nice cream pops are super simple to throw together, and couldn’t be more refreshing in the summer heat. I’m just so grateful for bananas, always! I forever have a healthy, frozen treat option, no dairy/cruelty necessary. And pops are just so FUN!
