My favorite vegan green smoothie bowl! Full of fiber, plant protein, and healthy carbohydrates to fuel you through an amazing day.
How do you guys take your smoothie? Do you prefer bowls, or drinking them with a straw? I’m a thick, nice cream/smoothie bowl person, all the way. I’d much rather sit down and really savor the creamy richness of a good smoothie with yummy toppings than grab it on the go and drink it with a straw. I get that life can be busy and sometimes it’s super convenient to take it on the go, but I just love savoring my food and meals for bowls are the go to for me.
Every couple of weeks I switch up my work week breakfasts, always rotating between some type of oats or a smoothie bowl. Lately I’ve been loving this vegan green smoothie bowl, both for the simplicity, amazing texture and flavor, and of course, for how gorgeous it looks!
The base of this vegan green smoothie bowl isn’t anything new. It starts with frozen bananas, then a little bit of water or plant-based milk. I have a vitamix blender (also known as the second love of my life) so I need hardly any liquid to get things blended, but you may need up to a cup depending on how powerful your blender is.
Before blending, though, we need the pretty green color! For this turquoise-ish shade, I used spirulina powder. I’d never had it before and just happened to find some at a random store so I tried it, and I really like it! You can hardly taste it, but it has a lot of health benefits and turns your smoothie bowl into a beautiful looking work of art, so there’s that, too. If you don’t have spiraling powder, feel free to just throw in a handful of your favorite greens, the shade just won’t be exactly the same.
This vegan green smoothie bowl is simple, so it’s easy to customize with any other flavors you like! I love adding frozen blueberries, too, and sometimes plant-based protein powder (chocolate, because, duh). Obviously though if you add any additional ingredients into the smoothie itself, the color will change. Which is why I usually wait until after blending and go wild with the toppings to save the pretty color!
Some of my personal favorites for topping this pretty vegan green smoothie bowl:
- Protein powder for sweetness and to make it more filling
- Fresh blueberries or banana
- Oats for chewiness and to make it a little more satisfying
- Buckwheat groats for super crunchy texture
