Happy Monday, and Happy Father’s Day to all the dads! This past weekend both my and Joe’s parents came up to visit us in Perrsyburg. I was super grateful for the opportunity to see my dad and celebrate him on Father’s Day weekend, and for Joe to see his dad too. My dad is so special to me – I’ve been called a “daddy’s girl” since before I can remember and I couldn’t be more proud of that. He’s taught me how to work insanely hard to achieve what you want and has shown me what unconditional love and support looks like. I’ll never be able to express how much I love and appreciate him in words…but I can make him his favorite dessert, so I did that! I made him some apple pie bars (you may have caught them on Insta!) and was really pleased with how they came out. Those may have to make an appearance here during the fall months! I’m a seasonal gal so apple stuff during summer makes my brain like whaaaaat – but anything for dad!
I’m super close with my parents so any opportunity to see them is the best, and having both our parents here at the same time was great. We went out to eat then to a Mudhens baseball game. The weather was so gorgeous but at one point the sun was HOT. My mama got a sundae at the ballpark, which got me daydreaming about this vegan mocha nice cream. It’s an absolute dream. I mean, look at that chocolatey goodness!
This vegan mocha nice cream could not be more perfect for summer. Decadent and super rich and chocolatey, but still cool and creamy for all this hot weather. Mocha is one of my favorite flavor combinations, but typically when you find it in coffee drinks or desserts they aren’t particularly healthy, with tons of added sweeteners and junk you don’t need. Not the case here! This mocha nice cream is absolutely delicious, good for you, and couldn’t be easier to make.
Making the nice cream, as always, is simple – just blend frozen bananas with a little bit of almond milk, plus some cocoa powder for this mocha flavor. Unlike some of my other nice cream recipes, I threw a few dates into the blender for this one. Since I wanted mocha, I didn’t want tons of banana flavor to come through. So the dates kind of tame the banana flavor and give an amazing rich and caramely (but natural!) sweetness to the nice cream. Win win!
The sauce is a simple mix of prepared coffee, almond milk, and cocoa powder. Stir, stir stir to get that cocoa incorporated! Eventually it’ll come together into a smooth, rich, silky sauce. When I originally thought of this flavor combination, I knew it would need some crunch. I just bought some Colombian coffee beans (which smell INCREDIBLE, by the way) and poured a little bit of almond milk over them, then rolled them in cocoa powder so that it would stick. It worked perfectly! Joe also said the coffee beans added perfect crunch and even more powerful coffee flavor.
Cool, creamy, crunchy, and with the amazing combination of coffee and chocolate. This vegan mocha nice cream is worth the few little extra steps to make it a special, summery treat.
