Vegan Peanut Butter and Jelly Nice Cream

Smooth and creamy peanut butter nice cream, swirled with a sweet strawberry chia jam. This nostalgic bowl of vegan peanut butter and jelly nice cream is naturally sweetened and made with just 5 ingredients.

Happy Monday! How was your weekend?! Was your weirdly cold, too? The temperature hardly hit 50 both Saturday and Sunday so that was kind of a bummer, but I got in two super long and legit workouts, and Joe had to work Saturday anyway so I got a ton of baking, blog and school stuff done around the apartment that day. That’s actually my favorite kind of weekend, I think – super productive but also relaxed. I love feeling totally recharged and excited about another week, and I really cherish that weekend time to get ready for another week. Don’t get me wrong I love to get out for some weekend adventures (bachelorette party and bridal shower coming up!!!), but I feel so content and accomplished after these slower but really productive weekends.

The perfect reward for being really productive, any day of the week? Nice cream. Specifically, vegan peanut butter and jelly nice cream!

Now that the weird cold spell is hopefully over and it’s going to start being consistently hot, nice cream will definitely be a daily thing, since I won’t have to pull out the space heater to prevent from freezing when I eat it. Summer coming also means just 2 weeks of school to go! I cannot believe it’s almost over…I know I keep saying it but it just went so fast. So I’m just going with all my emotions and throwing it back to the best childhood flavor combo ever, pb&j!

Typically I’m a chocolate + nut butter kind of girl all the way (def still my favorite flavor combination), but there’s something so wonderfully nostalgic about peanut butter and jelly. It’s perfection in this nice cream, for sure.

As an adult my choice would def be almond butter over peanut butter, but since I was making this for my peanut butter-loving fiancee, that’s the route I went! And I suppose most people have peanut butter more readily on hand – but basically, any nut butter works for this bowl of heaven. I will most definitely be making myself a bowl with that almond butter variation after the wedding. The base is just frozen bananas and whatever nut butter you choose!

The flavors of bananas and peanut butter are perfectly balanced, and you may hardly detect the banana at all depending on what nut butter you go with. Next, you’ll swirl in a sweet, tart strawberry chia jam. It’s super simple to make and goes great on a ton of other stuff too – I like to make a big batch and have it left over for weekend pancakes/waffles, or banana bread (stay tuned for Thursday… 🙂

The jam is made by blending some fresh strawberries and water. This makes a pretty liquid-y strawberry mixture, so to thicken and give a more jam-like texture, we add chia seeds. If you haven’t heard of them, they are amazingly good for you. Packed with fiber, antioxidants, omega 3s, protein, in addition to being extremely beneficial in countering health problems you may currently have. Talk about a super food! Aside from all the nutritional positives, they add amazing texture to the jam. The chia seeds act as a thickening agent, giving the jam a wonderful consistency.

This vegan peanut butter and jelly nice cream is so creamy, dreamy, and SIMPLE! It’s the perfect pre or post workout meal, and also makes a great snack or breakfast. It’s so versatile and you can literally make it in about 5 minutes. Not to mention, peanut butter and jelly can never be a bad decision, right?! Have a fabulous week! 🙂

PS nice cream is even better when it’s all melty!! I love when it gets soupy like this. Am I weird and alone in that?? Don’t even care. Soooo good.

Vegan Peanut Butter and Jelly Nice Cream

Prep Time: 30 minutes

Total Time: 30 minutes

Yield: 1 nice cream bowl


  • 2-3 frozen bananas
  • 2 tbsp natural, unsweetened nut butter
  • 1/2 cup almond milk
  • About 10 strawberries blended with 1/2 cup of water, stir in 1 tbsp chia seeds, microwave for 2-3 minutes and let cool/gel in the freezer until it reaches a thicker, jam-like consistency, about 30 minutes.


  1. Blend frozen bananas, nut butter, and almond milk until smooth
  2. Blend strawberries and water, pour into a bowl and add 1 tbsp chia seeds
  3. Microwave the strawberry/chia seed mixture for 2-3 minutes, then place in the fridge or freezer for about 30 minutes until it thickens like jam
  4. Swirl the strawberry jam through the nice cream, top with more peanut butter/other toppings and enjoy!
