Have you guys started fall baking yet?! I hope so. I’ve already baked with apples quite a bit, but yesterday we went apple picking so I have a feeling those recipes will definitely happen again for my apple dessert-obsessed husband.

You may have seen my Instagram story, but yesterday on our drive to the apple orchard we nearly got side-swiped by a huge trailer. We were driving in the left lane and he didn’t see us and was trying to move from the right to the left lane – Joe swerved and almost went off the road, but luckily our mirror just got knocked off since Joe moved quickly enough. It was scary, but we were just really thankful nothing worse happened!

Now that we have our fill of apples, I’m saying HELLO to pumpkin.

Fair warning – this recipe marks the opening of the pumpkin floodgates here at beaming banana. It’s my first fall season blogging, and I’ve been SO excited to get into the pumpkin this year!! So many good recipes to come.

I wanted to kick off all the pumpkin with a super easy but absolutely delicious vegan pumpkin pie smoothie bowl! This bowl is full of all the traditional pumpkin pie flavors, but in healthified, creamy dreamy, smoothie bowl form.

Do you see that texture?! SO thick and creamy.

This vegan pumpkin pie smoothie bowl is super easy to throw together, which is why I’ve been loving it for a post-workout weekend breakfast lately. It’s great for when I’m starving but still want something that tastes rich and indulgent! The base is frozen bananas – with all the pumpkin pie spice involved, it doesn’t end up tasting like banana at all. But the banana is essential for making the texture of the smoothie perfectly creamy and thick.

Next is just some pumpkin, a heavy dose of pumpkin pie spice, and I added some vanilla Sunwarrior protein, too! If you want to leave the protein powder out, it should still work just fine – you may just need a little less milk.

This vegan pumpkin pie smoothie bowl is loaded with healthy fiber from the bananas and pumpkin, so it will keep you full and satisfied. Plus, the pumpkin is a great source of beta carotene, which gives it the beautiful orange color – our bodies use beta carotene for vitamin A which helps keep your eyes sharp. You could also add some greens for even more nutrients!

I love that this smoothie bowl is not only super rich and delicious, but can pack a ton of nutritional benefits at the same time! Breakfast of champions.

Pumpkin Pie Smoothie Bowl 2

This vegan pumpkin pie smoothie bowl is seriously creamy and has all the flavors of the traditional pie. It’s an amazing post-workout breakfast, or just for a healthy and delicious snack. I loved the richness and fall flavor those warm spices give – a totally different experience than the typical fruit filled smoothie bowl! So perfect for fall.

Bring on the pumpkin.
