This vegan spumoni nice cream is a take on the old fashioned ice cream combination of cherry, pistachio, and chocolate! A healthy, naturally sweetened twist on a classic and an amazing combination of flavors.

Speaking of fun, I’m SO excited because I’ve got a weekend packed with wedding festivities, from my last dress fitting tomorrow night, bachelorette party Saturday, then my bridal shower Sunday. So I’ll be headed back to Columbus tomorrow after summer school. Joe’s bachelor party is also Saturday.
Because I know our schedule is crazy over the next month, this past weekend before summer school started I was a MACHINE in the kitchen. I literally made 8 recipes for the blog in three days – between taking pictures, buying ingredients, and actually making the stuff, it can get time consuming. The one downfall (that isn’t actually a downfall) is that all the recipes turned out amazing so now I’m just dying to share them all. Other than forcing me to be patient, the recipe whirlwind was super fun – baking is my favorite hobby (along with working out), after all.
So although I’m itching to share what I baked up last weekend, today we’re talking vegan spumoni nice cream, which is definitely good enough. This recipe is the definition of fun! I’m a sucker for neon/rainbow so I was bound to love this one. This spumoni nice cream came about because Joe was reminiscing on childhood favorite flavors. He’s Italian and a big fan of the spumoni combination (don’t ask me about the name, no clue what it means, haha) of pistachio, cherry, and chocolate. He wanted a healthified version, so of course I had to work it out for my guy! The result is pretty good if I do say so myself 🙂 and it couldn’t be easier to make.
For each flavor, you use the same base with a few variations. Each of the three flavors needs 1 frozen banana and about 1/2 a cup of unsweetened almond milk. It’s totally optional but if you want the nice cream a little sweeter, you can add a date or two to each flavor.
I started with the cherry flavor, which gets 1 frozen banana, the almond milk, and about a half cup of frozen cherries. You can use either the red tart cherries or dark sweet cherries. I love the dark ones (can’t wait to devour those all the time after the wedding), but Joe opted for the red tart and they ended up giving such pretty color! In addition to blending it into the nice cream itself, I also chopped some up and swirled them through for some great texture and pops of the tart cherry flavor. After I blended and mixed the cherries in, I put the nice cream in a small bowl and put it back into the freezer so it could firm up and be scoop-able (technical terms here).
Next I moved on to chocolate! You can’t have vegan spumoni nice cream without chocolate. Really you shouldn’t have any dessert without chocolate, cause I said so. Anyway, this is the easiest one – just a frozen banana, a couple tablespoons of dark, unsweetened cocoa, and the almond milk. Blend again, and into the freezer in a small bowl with this one, too.
Last is pistachio! To get the super vibrant green flavor and a nutritional punch (you know me by now), I first blended the almond milk with spinach. Once I had the super liquidy, alien green mixture, I blended the banana into that. It got super thick and you will not taste the spinach! But it was perfect for achieving that beautiful green color. To that I swirled in some pistachios, which of course added awesome nutty flavor and crunch. Joe and I actually shelled them together, cause you know, couples that crack pistachios together, stay together. Into the freezer with this one too!
I let all three flavors freeze for an additional two hours, ONLY because I wanted it to look cute and stay in scoop form (pistachio obvi objected to this, as you can tell…or I just took too long after taking it out so it got melty but that’s how I like my nice cream, personally!) – in any other situation we’d pour them right from the blender into a bowl and dig in, cause regardless the flavors are on point, plus nice cream is always better fresh in my opinion. So if you aren’t taking pictures of your food, eat it straight after blending! The cherry is perfectly pink, sweet and tart, the pistachio is earthy and gives that salty-sweetness, while the rich and decadent chocolate balances everything out (the chocolate makes it, in my opinion!). This vegan spumoni nice cream is so fun and a great combination of flavors AND textures. Vegan frozen perfection!
