Happy Monday, beautiful people! How was your weekend? I’m currently enjoying an extra day of the weekend because of the holiday, and it was in the 60s here this weekend. THE 60S, GUYS. This girl was real happy alllllll weekend. Seriously, I find my mood strangely affected by the weather and nothing makes me happier than sunshine and warmth!
With the random warm weather, *crosses fingers hoping it stays* I’ve been craving smoothie bowls! Partly because it has to be warm enough that I don’t need my space heater and a blanket to eat one. But I digress.
Smoothie bowls are the best, in my opinion because of their versatility. They make an amazingly quick and easy healthy snack, breakfast, or even dessert. Oh, and flavor options are endless! Today we’re getting beachy with this vegan tropical smoothie bowl.
Are you guys beach people? I know I know, who doesn’t like the beach. BUT I know it’s not necessarily everybody’s first choice for vacation. I, however, am most definitely a beach person. I get way too enthralled with how amazingly gorgeous palm trees are, then of course there’s the beaches themselves, and the IMMACULATE weather.
All of that makes the beach so ideal for me, if we’re talking vacation. There’s nothing I love more than getting up, getting in a great workout, grabbing a huge plate of fruit at the breakfast buffet, and tanning on the beach ALL freaking day. Joe and I did that exactly, on our honeymoon in the Bahamas for 5 days straight. It was bliss.
I’m going to end the beach talk for my own sanity – I mean, it is still Feruary, I can’t get too ahead of myself with warm weather hopes. The point I’m getting at is that tropical fruit is so delicious and fun! I LOVE them all. Coconut, pineapple (although gives me sandpaper tongue – does this happen to any of you guys?!), mango, bananas, and passion fruit. They’re all so perfect on their own, but complement one another so well. Not to mention the way they can immediately transport you to tropical paradise with one bite! So thankful for frozen fruit to get me through these winter months.
This vegan tropical smoothie bowl is made like most others – we start with frozen bananas, and for this one specifically, frozen mango chunks! For the tropical vibe, obvi. Blend those with some almond milk until it’s creamy dreamy, and that’s literally it. Pour it into a bowl and go crazy with the toppings! I like more fresh banana, shredded coconut, some chia seeds, and passion fruit.
Have you guys had passion fruit?! We tried it for the first time a few years ago on a trip to the Dominican Republic with my family, and fell in love. It’s super ugly, with a wrinkly outer skin and seed-filled inside, but once you get past the appearance it’s so awesome. Super tart, ultra creamy then super crunchy from all those seeds. I love it on top of this creamy, tropical bowl. Definitely not required, I’m not sure how difficult it is to find, but if you can, try it!
This vegan tropical smoothie bowl is a great twist on a traditional smoothie bowl. It’s super simple to throw together for a healthy snack or meal, while loaded with sweet, tropical flavors like bananas, mango, coconut and passionfruit.
Also, it’ll help you pretend you’re on an island rather than in cold Ohio. Spring, come SOON PLEASE.
