An insanely delicious flavor combination in a warm, comforting, bowl of oats. These vegan almond butter cup oats are a decadent indulgence you can feel awesome about! Naturally sweetened and easily made gluten free.
So the other day I mentioned the fiancee and I were headed up to Michigan for a quick day and a half – that little trip was for me to get my Insanity LIVE certification! I’m sure you’ve heard of the Insanity workouts by Beach Body, led by Shaun T. I’m now trained/certified to teach the Insanity workouts in a group setting, for the ultimate challenging, motivating, insane workout! I couldn’t be more excited. I love teaching my kiddos at school and I’m really excited to be able to do something with my passion for health/fitness and teach some adults!
Between getting my certification all day Sunday, our long 16 mile run on Saturday and traveling to and from Michigan, I’m pretty wiped out on this Monday morning. Nothing a good bowl of creamy, dreamy oats can’t fix! Specifically these vegan almond butter cup oats. No better combination, trust me on this one.
Vegan almond butter cup oats. AKA a peanut butter cup in oatmeal form, only better. I LOVED peanut butter growing up, and once I went totally plant-based/healthy, unprocessed junk I still loved all natural peanut butters…until the day I discovered almond butter. Life changed forever – I don’t know exactly how to describe it but the flavor is so much deeper, it’s super nutty, slightly textured, and so, so creamy. Lately Joe’s been making it from raw almonds in our food processor, and the flavor is even better than what you get at the store. Like, I would drink it through a straw. People say they want pizza/cheese/etc. to be calorie-free…for me that would be almond butter. But for now, I’ll settle for a couple tablespoons swirled into my deep, dark chocolate oats for a more appropriate portion size and a super satisfying breakfast.
I know this is just a bowl of oats…I know. But you have to trust me on this flavor combination. Think peanut butter cup…amped up like 100 times and transformed into a healthy breakfast you don’t have to feel an ounce of guilt about. In fact, you can feel GREAT about it because of the multitude of health benefits packed into whole grain oats and almond butter (healthy fats, protein, list goes on!). Simply cook your oats in the microwave (or on the stovetop, if that’s your thing). Stir in the cocoa powder until it’s incorporated, then swirl some almond butter through the oats. I save a tablespoon for the top, too! I added some banana to mine for a little sweetness, but if you find you want sweetness without the nana you could go with a few dates broken up and swirled through the oats or a stevia packet.
I’ll be treating myself to this bowl of bliss this weekend to celebrate my certification, whoop whoop! You should treat yourself too, simply because you’re awesome. Or cause you made it through Monday.
