I’m so in love with my oatmeal bowls that I so often overlook baking oats. Plus, now that it’s summer, who wants to turn on the oven?! But trust me, it’s worth it for vegan banana berry baked oatmeal. Baking oats just takes them to a whole other level of dense, thick, and satisfying, and with all the fruit going on here, this recipe is pretty irresistible.

So, preheat that oven! You’ll thank me later. 🙂

Vegan Banana Berry Baked Oatmeal

This vegan banana berry baked oatmeal starts with whole grain, gluten free, rolled oats. No oat flour needed today, just the oats in their perfect, chewy, whole form! To that, we’ll add some flax eggs to bind things a bit (and for extra health), super ripe, mashed banana for all the sweetness, and some plant milk to bring everything together. I used my homemade oat milk, but any plant milk should work just fine.

Once all that is mixed together, gently fold in your favorite mix of berries, and you’re ready for baking.

Pour the oat mixture into a square pan, and bake for just 30 minutes. Once they’re ready, let the oats cool completely, then cut however you like! I usually do 9 squares and fine that’s the perfect amount for 1 good, filling serving.

The best part of this vegan banana berry baked oatmeal? All the chewy, dense oats combined with the sweet banana and juicy berries, of course! But another reason I love this recipe so much is that it’s super versatile. I actually really like eating a big piece cold, topped with a bit more oat milk and some more fresh berries. It’s also a perfect grab and go snack or breakfast for the more busy summer days! Hope you guys love this one as much as we did – I couldn’t stop straightening the rows in the pan, if ya know what I mean.

Vegan Banana Berry Baked Oatmeal

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 9 servings

Ingredients

  • 3 c whole grain gluten free rolled oats
  • 2 flax eggs - 2 tbsp ground flaxseed in a bowl with 6 tbsp water, set in the refrigerator for 15 minutes
  • 1 c ripe, mashed banana
  • 1 c plant milk
  • 1 c berries - whichever ones you like!

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the oats, flax egg, mashed banana, and plant milk until everything is combined into a thick batter.
  3. Gently fold in the berries, and pour the mixture into a nonstick or parchment lined square pan.
  4. Bake the oatmeal for 30 minutes.
  5. Top with more fresh berries, vegan yogurt, nuts, etc. and enjoy!
