I’m so in love with my oatmeal bowls that I so often overlook baking oats. Plus, now that it’s summer, who wants to turn on the oven?! But trust me, it’s worth it for vegan banana berry baked oatmeal. Baking oats just takes them to a whole other level of dense, thick, and satisfying, and with all the fruit going on here, this recipe is pretty irresistible.

So, preheat that oven! You’ll thank me later.

  • Rolled oats: I always use old fashioned rolled oats for the best chewy texture and lots of healthy whole grains.
  • Ground flaxseed: you’ll make flax eggs which will help to thicken and hold the baked oatmeal together.
  • Banana: the bananas are the only sweetener in this baked oatmeal, so make sure they’re super ripe and spotty for optimal flavor and sweetness.
  • Nondairy milk: a bit of milk brings the mixture together. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
  • Berries: fresh or frozen works, go with whatever berries you like best!

  • Make sure to use a nonstick or parchment-lined pan. Use a nonstick or parchment-lined square pan so that the oats don’t stick after baking.
  • Let the oats cool before cutting. Make sure to let the oats cool for 30 minutes in the pan before cutting into squares.
  • Grab it and go, or make it fancy with whatever toppings you like. These are a great on the go breakfast, or you can make it a little more special with a drizzle of nut butter or some vegan yogurt.

But another reason I love this recipe so much is that it’s super versatile. I actually really like eating a big piece cold, topped with a bit more oat milk and some more fresh berries. It’s also a perfect grab and go snack or breakfast for the more busy summer days! Hope you guys love this one as much as we did – I couldn’t stop straightening the rows in the pan, if ya know what I mean.

Vegan Banana Berry Baked Oatmeal

Ingredients
  

  • 3 cups rolled oats
  • 2 flax eggs – 2 tbsp ground flaxseed in a bowl with 6 tbsp water, set in the refrigerator for 15 minutes
  • 1 cup ripe, mashed banana
  • 1 cup nondairy milk – I used unsweetened almond milk for neutral flavor, but any nondairy milk should work
  • 1 cup berries of your choice

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the oats, flax egg, mashed banana, and plant milk until everything is combined into a thick batter.
  • Gently fold in the berries, and pour the mixture into a nonstick or parchment lined square pan.
  • Bake the oatmeal for 30 minutes, then let them cool in the pan for 30 minutes before cutting.
  • Add toppings and enjoy.
  • Store leftovers in the refrigerator.
