Thick, creamy vegan banana bread overnight oats! All the traditional banana bread flavors in a comforting, super healthy breakfast. Gluten free and naturally sweetened!
First of all, if you haven’t heard of overnight oats, it’s simply soaking oats in a liquid (almond milk, coconut milk, soy milk, whatever your preference) until they’re soft and creamy. Basically, it’s a way to avoid cooking the oats but still having a thick, hearty, deliciously healthy breakfast!
I love the idea of eating a food in it’s raw state rather than having to cook, and of course dirtying fewer dishes/pans is ALWAYS plus.
These vegan banana bread overnight oats are my new favorite flavor. Simply combine some oats, ground flaxseed, a mashed ripe banana, cinnamon, and some vanilla in a sealable container, and mix it all together. Pour in the almond milk until the ingredients are just about submerged, stick it in the fridge, and you’re totally done.
Almost too easy, right?!
While you sleep, those little oats are enjoying their almond milk bath, getting nice and soft and creamy for you to devour for breakfast! I’ll probably never get over how genius the whole overnight oats concept is. I love it.
A few notes about the ingredients – I always use whole grain, rolled oats. Not quick oats, which are slightly more processed and smaller. I love the heartiness and chew to whole oats, and less processed is always the way to go. Make sure to include the ground flaxseed! This ingredient is optional in a lot of my recipes, but I never make overnight oats without it. Because they act as a thickener, the texture of the oats will be amazingly creamy and thick.
Finally, the banana, who’s the star here! Make sure it’s really ripe – brown and spotty, almost to the point of no return. Since the banana is the main sweet component of these vegan banana bread overnight oats, you’ll really want to taste that banana flavor, and it’ll sweeten everything else just perfectly if it’s nice and ripe!
