Happy Thursday, beautiful people! I’m going to jump right in today because I freaking LOVE oats, and I want you guys to have this recipe in your belly as soon as possible. It kills me a little inside every time somebody tells me they don’t like oats, because I genuinely believe it’s an issue with cooking methods rather than disliking the taste of oats themselves! But more on that in a sec.
I’m obsessed with oats for how satisfying and comforting they are, especially in the winter. They’re also extremely versatile, and I try to eat oats every day. The health benefits are definitely even more motivation to incorporate them regularly into my meals. Basically, if you don’t already eat them, you need to get some oats in your life, as soon as possible! If you’re on the fence, may I suggest trying a vegan chocolate strawberry oatmeal bowl? Cause chocolate + strawberry is a combo that’s pretty damn easy to love, so you really can’t go wrong!
This vegan chocolate strawberry oatmeal bowl is a fun flavor spin on my original oatmeal breakfast bowl, which I eat in some form almost every day. I simply added some cocoa powder for chocolate flavor, stevia to balance out the bitterness of the cocoa, and strawbs on top for that sweet, tart, lovely addition berries give anything they touch.
So where this oatmeal is going to differ from overly mushy, not so appealing oats you’ve had in the past is the preparation method. Instead of dumping water in and microwaving, or dirtying a pot and babysitting the stove, we’re going a totally different route. Mix the oats, flax, cocoa, and stevia in a bowl, then measure out the water and put it into a glass. Put only the water into the microwave and heat until it’s super hot and bubbling, carefully remove it from the microwave, and pour it over the oats. I always do this step in the sink, so that you avoid contact with hot water if any splashes out.
Cover the bowl with saran wrap and let it sit for at least 30 minutes, or longer if you’d like. During this time, the oats will absorb all the water. Instead of getting way too mushy, they’ll increase in volume and get SO thick and fluffy. It’s seriously amazing, and I can’t take credit for the idea, cause it was my amazing husband, per usual. But I can say I will never cook my oats another way again, and it’s SO easy. So many wins.
Once the oats are done absorbing the water, it’s time for toppings! Of course we need strawberries, and you could even add some vegan chocolate chips if you’re feeling indulgent. I love this bowl for February, because even though v-day has come and gone, we all need some chocolate + strawberry love in our life, right?!
I seriously always underestimate how amazing the chocolate and strawberry combination is. The oats are so amazingly thick, then there’s the rich, dark chocolate flavor with the tart, sweet berries. Perfection in a bowl. How can you have a bad day when it starts like this? I seriously hope you guys try this! I know it looks like a simple bowl of oats, but I promise you’ll love it.
