Happy Monday! I still can’t believe it’s November and that Thanksgiving is like 2 WEEKS AWAY. So excited I can hardly stand it, because one day closer to Thanksgiving means it’s also one day closer to the most wonderful day of the year.
Yes, I’m already talking about Christmas…and I’m so not sorry about it. I worked on a gingerbread cookie recipe all day yesterday and it only increased my excitement. CANNOT WAIT to share that one!
But for today I’m so excited to share vegan crockpot apple cinnamon oats! These oats are the perfect comforting, soul warming fall breakfast. They would be perfect for Thanksgiving breakfast, as they’re so easy to make ahead in the slow cooker. We all need one less dish to worry about that day, right?!
I hadn’t tried oats in the crockpot before, mostly because I didn’t have one. Good news – it’s the easiest way to make oats, and the result is legit!
Okay, so let’s talk vegan crockpot apple cinnamon oats. The method is so simple, and the flavor is seriously incredible.
The first step is to combine all the ingredients in the slow cooker – for these apple cinnamon oats we’re using whole grain rolled oats, diced apples (whatever variety you love!), a heavy dose of cinnamon, and some unsweetened applesauce.
Next, just add the almond milk and cook on high for about 3 hours – you could also cook the oats overnight, on the low setting.
Be sure to check your specific slow cooker’s settings, and be aware of how hot it can get! You wouldn’t want to be scraping burnt oats off the sides.
Finally, once all the almond milk is mostly absorbed and the oats are nice and thick, scoop them out and store in a tupperware container. My husband ate these all week for breakfast, and it seems the flavors develop even more the longer they sit! The cinnamon aroma was seriously drool-inducing.
These vegan crockpot apple cinnamon oats are laughably easy, but the end product is amazing. The slow cooker gives the oats the perfect thick, creamy, luscious texture, while the bites of soft apple and complementary spice from the cinnamon provide perfect flavor. Topping with peanut butter/raisins/nuts is optional…but highly recommended. This would be great just with plain oats, or some other flavor variation with the same cooking method – you’ll get super creamy, dreamy texture regardless!
