The magical, super easy breakfast I take to work everyday. So easy to prep on weekend mornings and you’re all set for the rest of the week – these vegan overnight oats are the ultimate healthy breakfast that’ll power you through your day.
How was your weekend, friends?! I survived the 15 mile run!!! It was insane. When we left, the temperature was like 6 degrees with below zero windchill. Joe and I were so proud/excited afterwards, it was an awesome feeling, and needless to say we pretty much laid around the rest of the weekend to recover. We did go to dinner Saturday night, and I made dessert to celebrate our fourth Valentine’s Day together – and our last one before we’ll be married, woohoo!! I love making healthy desserts for us so I baked up skillet cookies using coconut flour as the base, and they turned out to be delish. We topped them with almond milk chocolate sauce and cherries, posted a picture on my instagram if you missed it (@beamingbanana).
To kick off a new week I’m sharing my absolute favorite work breakfast! Vegan overnight oats are so, so simple and super versatile. I prep these every Sunday and I have my work breakfast ready for the entire week. It keeps me totally full until lunch, and that’s saying a lot since my kindergarteners and I have quite the active schedule all day long. Not to mention they’re absolutely delish. You need them in your life!
Obsessed with my neon tupperwares, had to be said! Anyway, the key to overnight oats is to basically drown the oats with almond milk (any other milk would work too – coconut, cashew, etc.). The oats soak up a TON of liquid, and if you have extra time you can even check them after a few hours and add some more liquid – they’ll just get even creamier! I’m always surprised by how much moisture the oats soak up and it just makes for a delicious, creamy final product.
I start by putting a cup of oats in each of my work tupperware containers, then pour almond milk over the oats – I never really measure this, I just try to almost totally cover the oats. And that’s literally it! Ground flaxseeds are AWESOME for a huge nutritional boast, and I sometimes add some cinnamon for extra flavor if I’m feelin it. Close up the containers, and they’re ready to go!
Then watch those dry little babes puff up into creamy, dreamy goodness! Truly what makes vegan overnight oats so good is the multitude of toppings/add ons you can use. For even more flavor, add some nuts, raisins, shredded unsweetened coconut, or frozen/dried/fresh fruit. I take a little container of homemade almond butter to mix with mine – TOO good. Joe has also been making these soaked oats before our long runs to have after so we have very little to prep since we’re always starving – the best!
