Vegan Peanut Butter and Jelly Oats

A twist on a childhood classic – these vegan peanut butter and jelly oats combine amazing flavors into a healthy, hearty breakfast bowl. Naturally sweetened and easily made gluten free with GF oats.

How’s your March going so far?! As a runner, mine’s not great. I’ve been having a lot of issues with my knee lately which is making me anxious about training, cause it’s just getting worse and I’m not sure what else to do about it. I’m trying to stay positive and trust God but it’s difficult – I don’t want to push it too hard but I also don’t want to not achieve our goal of doing the marathon together.

On a more positive note, as a first year teacher it’s seriously crazy to me how quickly the year is flying by. It’s been amazing and I’ve learned so, so much. My kids keep talking about how they want to stay in my class forever, but before we know it they’ll be on to first grade! Makes me want to tear up just thinking about it. Why can’t we all stay kids in kindergarten forever?! That may not be possible, but these vegan peanut butter and jelly oats will have you feeling all wonderfully nostalgic even if just for a little while.

These vegan peanut butter and jelly oats are SO good, and they couldn’t be easier to make. Simply cook your serving of whole grain oats in the microwave with some almond milk, stir in a tablespoon of peanut (or almond!) butter, and top with more peanut butter and strawberry “jam.” I am NOT talking about jams/jellies you buy at the grocery store – while I’m sure there are absolutely exceptions, most jams/jellies are packed with an insane amount of crazy ingredients and tons of unnecessary added sugar. Not what we want!

Instead of using store-bought jelly, here we’re making a fruit puree. I simply pulsed some frozen strawberries in the blender until they were pretty fine, and it’ll come out to a smooth, liquid-y consistency! We just kept it in a jar on the fridge and it was awesome in our smoothies/on top of banana ice cream, too. Top your oats with some of the fruit puree “jelly” and you’ll be transported back to the lunch room, eating your favorite sandwich. Now that I think about it, when I was little most of the time I had only peanut butter on mine…not surprising looking back. #nutbutteraddict

Vegan Peanut Butter and Jelly Oats

Prep Time: 8 minutes

Cook Time: 2 minutes

Total Time: 10 minutes

Yield: 1 bowl


  • 1 cup whole grain rolled oats
  • Unsweetened almond milk
  • Natural, unsweetened peanut butter (almond butter would work too)
  • Strawberry jam (pureed strawberries)


  1. Cook oats in almond milk in the microwave, about 2 minutes.
  2. Stir 1 tbsp peanut butter through the oats.
  3. Top the oats with strawberry puree and more peanut butter.
