Hi from the Bahamas! Honeymoon has been incredible so far. We’ve spent all our time lounging around on the beach, working out, and enjoying being married! Def can’t complain. Something else nobody else will complain about? Deliciously sweet, hearty, chewy, vegan strawberry banana baked oatmeal.

With the addition of fresh strawberries and sweet bananas mixed right into the oatmeal, this vegan strawberry banana baked oatmeal is the perfect healthy snack or breakfast. It’s also easily made ahead of time, making it perfect for a grab and go breakfast or after school snack throughout the week! Kids would love this recipe, and the great news is it’s totally fruit sweetened.

This baked oatmeal is super simple and comes together in one bowl – just mix up oats, a flax egg, unsweetened applesauce, date paste, bananas, and almond milk! Make sure those bananas are ripe, ripe, ripe! The browner/uglier/spottier, the better. That’s what gives this baked oatmeal it’s perfect sweetness.

Once you’ve got everything in the bowl, just mix and you’re ready for the oven. No mixer necessary, just stir everything until combined. I used a square pan, like for brownies. This vegan strawberry banana baked oatmeal only needs to bake for 20 minutes so that it will cut neatly into bars when cooled, but the oats will still be perfectly soft and chewy.

Typically I’m a microwave oats type of girl. Actually wait, most often a ground oats into flour pancake girl, BUT this vegan strawberry banana baked oatmeal really impressed me! I was excited with how well it turned out, and I loved that I could cut it into bars. Almost like a brownie but with oats as the base – an oaty? No? I’ll stop.

The vegan strawberry banana baked oatmeal is hearty, thick, chewy, and the addition of the fresh strawberries really made them. This is a perfect recipe to make on the weekend and save for breakfast or a snack all week long! Hope you love it.

Vegan Strawberry Banana Baked Oatmeal

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 9 pieces/bars of baked oatmeal


  • 2 c whole grain rolled oats
  • 2 large mashed ripe bananas
  • 1 flax egg (1 tbsp ground flaxseed in a small bowl with 3 tbsp of water, set in fridge for 15 minutes before using)
  • 1/2 c almond milk
  • 1/2 c unsweetened applesauce
  • 1/2 c date paste (I used about 8 dates with 1/2 c water)
  • Fresh strawberries to top


  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix all the ingredients except the strawberries until well combined.
  3. Pour batter into a nonstick round or square pan and bake for 20 minutes.
  4. Let the baked oatmeal cool for 15 minutes, and top with strawberries before cutting to serve.
