Good morning! Or good afternoon, or evening…let’s eat waffles. Because we can all agree that since breakfast is SO good at breakfast, it may taste even better for dinner.
So, just woke up and ready for a great day? Vegan banana waffles it is! Just got home from work and want a fast, easy, comforting, healthy dinner?! Vegan banana waffles. Waffle Wednesday?
…you get where this is going, right?
Serious question: are you team pancake, or team waffle? Due to my ongoing, completely inexplicable internal necessity to pick a “favorite” for everything – nut butter, berry, etc. – this is definitely a foodie debate I feel like I must take a side on.
So, if you seriously held me down and forced me to choose one of these breakfast staples, I’d probably go team pancake, mostly because of when I discovered this recipe.
Which is why it’s so weird that lately, I’ve totally been cheating on pancakes. I’ve had waffles as my fun weekend, post workout breakfast for like, two months now.
Pancakes, I still love you. But crisp on the outside, soft on the inside, fluffy vegan banana waffles have my heart for the time being.
We didn’t have waffles very often growing up – my mom was a chocolate chip pancakes on Sunday kinda mom, and goodness knows I never argued with that. So, I think I just gravitate toward pancakes because they’re what I’m familiar with.
BUT. Can we talk about how waffles are essentially the perfect food? Crisp on the outside for just enough texture, soft and almost gooey in the center, and they literally have little craters for whatever sauce or toppings you choose. Like, a nice cozy hole for my almond butter? HELLO, waffles are my new best friend.
These vegan banana waffles are so great not only for their flavor, but they’re almost too easy! To start, you need some banana flour – my favorite. A slightly sweet flavor, but not overwhelmingly banana-y, for any of you that are concerned. It also gives great crisp texture on the outside but stays nice and soft in the center. The only other dry ingredient is ground flaxseed, and it’s totally optional. I just like it for the extra nutritional punch, and a little bit more nutty flavor and a teeny bit of texture.
Only two more ingredients – mashed bananas, because, obviously. Then some almond milk to bring everything together, and you’re ready for the waffle iron!
I got Joe a waffle iron quite randomly for his birthday a few years ago, and it was totally the dark horse as far as becoming one of the best gifts I’ve ever given him (and myself I suppose, haha). We use it almost every day! Me on the weekends for breakfast, and Joe loves dessert waffles during the week.
The one slight downfall to our iron is that it can get quite grumpy and sticky – so, just make sure you spray sufficiently with coconut oil spray if yours isn’t nonstick.
The amount noted in the recipe will make about 2 waffles, and that’s a pretty large portion, but I can definitely eat that by myself. Don’t judge me, they’re post workout and I’m always starving! If you want the amount show in these photos, just double the recipe, and it’ll definitely serve at least two.
Once you’ve cooked the waffles to your liking and hopefully popped them out without any sticky issues, it’s time for toppings! This is the most fun part of waffles, right?! I went with some peanut butter and more fresh bananas.
Other highly recommended options: almond butter (team AB foreva!), fresh berries, coconut, chocolate chips, CHOCOLATE FUDGE FROSTING?!
I got carried away quickly there. But that would be DIVINE for a special birthday waffle. Moving on!
These vegan banana waffles are crispy on the outside, soft and chewy in the center, and have just the perfect amount of banana sweetness. Breakfast, lunch, dinner, or dessert, these never disappoint, regardless of your stance in the pancake versus waffle debate!
