Hello, friends! How are you doing? I feel like we don’t get asked that question often enough, and we definitely don’t answer it genuinely enough. I hope you’re doing well, and if not, I’m here to bring you a cute little stack of pancakes to hopefully brighten your day just a little bit!

First of all, let’s chat about breakfast. It’s is without a doubt my favorite meal of the day. Oats make an appearance 90% of the time, whether it’s in the form of a sweet slice of banana bread or my favorite breakfast bowl. But for days when pancakes are calling my name, vegan blender banana pancakes have become my go to!

I’ve made pancakes lots of different ways, with lots of different ingredients. While I love them all (I won’t EVER say no to healthy vegan pancakes), I do have to admit that oats are my favorite base of all. There’s just something about their subtle, slightly sweet flavor, and amazing hearty texture. They come out perfectly soft and thick every time, and are super satisfying.

So, when I wanted to make blender pancakes, I knew oats were the way to go. These vegan blender banana pancakes combine my beloved oats, bananas, and some almond milk for a dreamy, easy peasy pancake breakfast. Yep! Just three healthy ingredients and one blender cup will give you this cute lil stack of pancakes.

First, combine the oats, banana, and almond milk and blend until totally smooth. The batter will be thick and wonderful! When the batter is ready, heat the griddle, and use about a quarter cup of the batter for each pancake. Yes, I’ve made one massive pancake before, and it was just as fantastic as a stack. You do you, though.

Finally, we’re ready for TOPPINGS. Do you, okay guys? Nut butter, fruit, nuts, or maple syrup, if you’re a purist. I personally love extra banana and if I’m really feeling fancy and decadent, this Date Lady syrup. Pardon my language but holy SHIT, guys. You know I love dates, as they’re used in 99% of the recipes on my blog. The wonderful people at Date Lady have condensed my fave little dates into freaking rich, thick, super sticky and luscious SYRUP. It’s amazing and you need it in your life.

Want some date syrup but you’re feeling tropical or just love coconut? They’ve got coconut caramel sauce, too. Honestly, look at it!! I used the date syrup on this stack, but my husband loves the coconut caramel. Can you go wrong with either?! The answer is no, you cannot.

These vegan blender banana pancakes are perfectly soft and sweet, and they’ll definitely leave you satisfied. I love the simplicity of using the blender instead of multiple bowls, mostly for the fact that it means less time until I get pancakes in my mouth.

Vegan Blender Banana Pancakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 1 serving, 4 pancakes

Ingredients

  • 1 c whole grain gluten free rolled oats
  • 1 ripe banana
  • 1/2 c almond milk

Instructions

  1. Combine all ingredients in a blender and blend until thick.
  2. Heat the griddle/pan to medium high, and use a quarter cup to portion out about 4 pancakes.
  3. Cook the pancakes for 4-5 minutes, until the edges begin to dry and bubble slightly.
  4. Flip the pancakes and cook another 5 minutes, or until golden brown to your liking.
  5. Serve with your choice of toppings!
