Vegan Blueberry Pancakes

I’M GETTING MARRIED IN LESS THAN A WEEK!!!! Eeeeeep. Today I’ll have my last dress fitting, so I’m praying everything looks the way it should. We had several things that were definitely not right the past few times so I’m really hoping I love it. Now I’m in Columbus for  the rest of the week up until the big day, helping get the last few details together and just getting even more excited (is that even possible?!). Plus, minimal days until the wedding means the stupid ass diet is almost over!!!!!

Thinking a tall stack of pancakes will be one of my first celebratory post-vow meals. These vegan blueberry pancakes fit the bill perfectly, and they’re oh so perfect for summer.

Now if you’ve been around these parts before, you know I’m a chocolate girl all the way. But it’s hard to turn down the beautiful, fresh, sweet berries that are so perfect in the summer! These pancakes, like my other pancake/waffle recipes, are super simple and quick to mix up. The batter for these vegan blueberry pancakes is a mix of whole grain oats ground into flour, ground flaxseed for awesome texture, and my favorite Sunwarrior protein!

I used vanilla for this recipe because the vanilla is the perfect complement without overpowering the blueberry flavor. A little almond milk brings the batter together and you’re ready to cook! I do a couple minutes on each side – just go with how they look, when they dry out a bit on the sides you know they’re safe to flip.

Rather than folding the blueberries into the batter and risking them popping and bleeding their beautiful color, I just dropped a handful on top of each pancake when I first poured the batter onto the griddle. I loved the look it gave the pancakes, like perfect little blueberry jewels sitting on top! In hindsight I think I could’ve also mixed some berries directly into the batter, so do that too if you’re feeling it and want the berries a little more incorporated.

Crazy fact, I actually don’t like the texture of fresh blueberries. Baked into the pancakes they were perfectly juicy and combined with the pancake texture I was in love. But when it comes to fresh on their own, I’d take raspberries or strawberries first any day. But I love blueberry flavored things. Does that make sense? Probably not- but what I’m getting at is I loved the blueberries in the form of sauce on top of the pancakes.

The sauce is not required of course, but it gave the pancakes even more powerful blueberry flavor! The sauce is just fresh (you could use frozen, too!) blueberries blended with water or almond milk until it reaches a slightly runny consistency, so it’s pourable over the stack of pancakes. So pretty, and of course delicious!

Vegan Blueberry Pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 5 pancakes


  • 1 c whole grain rolled oats, ground into flour
  • 1 tbsp ground flaxseed
  • 1 scoop vanilla protein (I use Sunwarrior - feel free to just replace with protein of your choice, or more oat flour and adjust almond milk accordingly)
  • 3/4-1 c almond milk, depending on your protein
  • Fresh blueberries for batter, to blend with water into sauce and to top pancakes


  1. To make the pancake batter, mix the oats, flaxseed, protein, and almond milk.
  2. Judge the amount of milk based on the consistency of the batter - if it seems to thick, add a little more milk, if it's too thin, add some more oats/protein.
  3. Fold fresh blueberries gently into batter, so they don't pop/run.
  4. Cook pancakes on a nonstick griddle/skillet for about 2 minutes on each side - again, this is up to your preference as far as how cooked you like your pancakes!
  5. Top with blueberry sauce and fresh blueberries.
