Happy Monday! This past week felt like my first “real” week of summer. I taught summer school all June then went straight into full wedding mode, then honeymoon! Slowing down has been wonderfully relaxing but productive, too – I got my new name on my social security card, got my new license, finished all wedding thank you notes, and got to dive into my lesson plans for the coming year.

Another perk of time off is being able to take my time and get some really long, quality workouts in. Then I get to take my time for some amazing breakfasts, which almost always means a bananas and a smoothie bowl or pancakes. This week has turned into a sort of pancake-themed week here on the blog…not mad about it, because it’s always a good time for healthy vegan pancakes, no?

This stack is slightly more fancy than my typical pancakes because I had to go all out for a special man! Happy belated birthday to my daddy!! I’ve been a “daddy’s girl” since before I can remember, and proud of it. My dad and I are like the same person, both extreme perfectionists, determined, sensitive, and ambitious. My dad’s speech at our wedding was so amazingly sweet, and I’ll remember it forever. He’s the best example I’ve ever known of love, hard work, dedication, and support. His example helped me find the best husband I could’ve ever dreamed of, who also has all those incredible qualities. I’m a very lucky gal!

To celebrate my dad’s birthday, we’re making vegan chocolate banana cream pie pancakes – the perfect special occasion breakfast.

When it comes to my dad, banana is one of the first flavors that comes to mind – he’s an apple dessert fan too, but he loves desserts like banana pudding, ice cream, etc. I remember when I was little he loved eating banana ice cream, and I thought it was so disgusting (GASP, I know). Since then of course my tastes have grown to adore bananas more than anything, so long as it’s healthy 🙂

I wanted to do a spin on banana cream pie, an impressive, potentially labor intensive dessert, but making it even better by healthifying, veganizing, and chocolate-tizing it into pancake form! Now that I’m finished making up words, let’s get to the recipe.

These vegan chocolate banana cream pie pancakes are super simple – just some oat flour, mashed banana, cocoa powder, almond milk, and ground flaxseed. Some mashed banana in the batter, and more between the pancakes, for as much banana goodness as possible! As always, those bananas should be UGLY to give us the most sweet, banana-y flavor. Cook the chocolate banana pancakes, then spread with some coconut whipped cream. This provides the creamy element that a traditional banana cream pie would have. My dad is not a coconut fan, but here the banana and chocolate flavors will be most prominent anyway! Last, just layer some banana slices between the pancakes, for even more powerful banana flavor. I loved this fun spin on a banana cream pie in pancake form! Happy belated birthday, daddio 🙂

Vegan Chocolate Banana Cream Pie Pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 5 pancakes


  • Pancakes:
  • 1 c oat flour
  • 1 tbsp cocoa powder
  • 1 tbsp ground flaxseed
  • 1 mashed banana (1/2 in batter, 1/2 sliced to top pancakes)
  • 3/4 c almond milk
  • Whipped cream:
  • 1 can unsweetened coconut cream
  • A few dates to sweeten, if desired


  1. Stir the pancake ingredients together until it forms a thick batter.
  2. Cook pancakes on a nonstick griddle/skillet until firm and thick - I usually do about 5 minutes on the first side, then about 2 minutes on the other side.
  3. Whip the solid part of the coconut cream, and spread between and/or on top of the pancakes.
  4. Top with banana slices and serve!
